Asparagus and Mushroom Frittata

Reviewed: Mar. 31, 2003
This recipe had a WONDERFUL taste. All of our family gobbled it up - even the 2 and 1 year old! I did make quite a few "tweaking"-like changes though. To the ingredients I added 1 tsp. hot sauce, 1/2 tsp. salt and 3 Tbsp crumbled bacon (I think these were suggested in an earlier review). In the instructions under #2 I changed the cooking time for the asparagus to 6 minutes - 10 would have been WAY too long and the mushrooms only needed to be cooked 3 minutes. Under #3 I only had to cook the egg mixture for 2-3 minutes. Under #4 I baked the 10 minutes but it was very brown and close to burnt - I would adapt this to 7-10 minutes and watch it closely. The cheese needs to be broiled about 1-2 minutes. This is going in the KEEPER file!! Thank you!

Hailey's Smoothie

Reviewed: Feb. 3, 2003
This smoothie has such great flavor. I omitted the blueberries since they were out of season but the kiwi had a wonderful, distinct flavor. I didn't freeze my banana and it turned out fine - just not as slushie (which is what I prefer!) This is going on the morning smoothie rotation!

Cantaloupe Berry Smoothie

Reviewed: Jan. 17, 2003
Excellent flavor! I really like this combination but I couldn't get it to blend without milk (or liquid of some sort). I added 1/4 cup milk PER serving and it was SOOOOOO good! Now if someone can tell me how to get the seeds out it would be a hit with my kids! Maybe next time I will try blending the raspberries first with the milk and then putting them through a strainer. This one is a keeper - I found cantaloupe out of season; just chop into smaller pieces and blend longer.

Banana Shake

Reviewed: Jan. 17, 2003
Creamy and thick. My kids loved the "yogurt drink" as they called it. It is quite filling so I halved the recipe and then divided it up between the 3 kids. They were all slurping the bottom of the cup with their straws and asking if they can have one tomorrow too!

Reuben Hot Dish

Reviewed: Jan. 15, 2003
My family LOVES this dish; I have made it at least 5 times by now. The only problem I had was some of the noodles not getting saturated enough to soften; they were still uncooked - I simply cooked the noodles while I was assembling the other ingredients and cut the cooking time down to 25-30 minutes. This is a keeper - it is already typed up and in my recipe book to pass down to my kids!! Thanks!

Never Fail Fruit Cake

Reviewed: Jan. 14, 2003
Was VERY rich. Not sure if I will make this again but I sliced it very thin (had to use a wet hot knife to get through it neatly) and spread it out among the gift goodie plates we give for Christmas. When I served some at a Christmas party it was eaten with the candy/Christmas goodies and seemed to be enjoyed - I got several positive comments. The flavor was very sweet - almost a candy cake rather than a fruit cake. Make sure you LOVE coconut before making this as it is a main contributor to the taste and texture.

Black Forest Dump Cake I

Reviewed: Jan. 14, 2003
I didn't care for the pudding mix in the cake. There were areas that had almost a gel-like texture. I made this recipe without the pudding all the time and I will continue to do so. We did really like the addition of coconut to the recipe. That was a new one for us and will be a future variation for this recipe. I have also made this recipe with white or yellow cake mix and it was very good as well.
