Sausage Casserole

This was great! I used the frozen hash browns with onions and peppers and added an extra egg like other reviewers said. Leftovers were just as good if not better. We had this for dinner and both my husb and kids loved it :) Can use any type of sausage flavor you like, not just sage.

Baked Garlic Parmesan Chicken

Simple, quick, easy, healthy, meal. My whole family loved this, no leftover. Made it as directed. Chicken was tender and juicy and flavorful. Definate keeper!

Pumpkin Butter

Absolutly wonderful! I used canned organic pumpkin, pumpkin pie spice and *no* added sugar except for a drizzle (about 1tablespoon) of real maple syrup and a few shakes of stevia powder (a natural safe sweetner); it came out sweet enough...I can't imagine adding the 1.5 cups of sugar the recipe calls for, totally un-needed. I did use about 1 cup of apple juice rather than the 3/4 C recommended as I like it a bit less thick. Put it in my crockpot and then canned after hot water bath. Would totally recommend to anyone, completely yummy and super easy to make. We love it on toast and on whole wheat buttermilk pancakes instead of maple syrup for a nice change and less sugar.

Quinoa Pudding

This is my first time trying anything made with quinoa and I was pleasantly surprised. From the sugestions of others I substituted vanilla soy milk and also added chopped apples. Also added 1 tsp almond extract and 1 tsp raw sugar. I can see this as a hot breakfast in the morning :) Has a natural nutty sweetness to it.

Brisket with BBQ Sauce

Excellent recipe! We use this BBQ sauce for all our BBQ meats, right now I am cooking pork ribs and will be using this sauce. My kids (who are 5 yrs old and 20 months old) love it as well. Can adjust spices as needed.

Dijon Crusted Halibut

I have been cooking this dish for over a year now and it is fabulous! Both me and my hsband love it and he requests it all the time :) I have used every type of fish and they all taste great. My kids (they are 5 yrs and 20 months) wont eat it so I just dont put the topping on there fish- simple :) I just bake there with butter and lemon juice at the same time I bake mine. If you like tangy and want to try something different with fish this is IT!! Marilyn

Taco Casserole

This is a perfect weeknight dinner with a salad. My kids (ages 5 and 1) and my husband all loved it! It made a good amount which I love for leftovers, I thought it reheated well. I have used both the tomoto soup and tomato sauce (depending on what I had on hand at the time) and both tasted great.

No Bake Cookies III

These are my favorite cookies of all time! They are very easy to make. I have boiled the mixture from anywhere from 1-2 mins and they turn out fine either way. I also reduce the sugar just just under 2 cups. My whole family loves these, you can't go wrong.

Lemon Lush

My family has made this dessert for years and it *always* gets wonderful reviews! I would eat the whole pan if I could. You can not go wrong with this!!! And you dont have to use lemon pudding...chocolate, butterscotch, vanilla, etc taste also taste great!!!

Addictive Sweet Potato Burritos

I would have never thought to mix sweet potatos and beans! As suggested I used black beans which I love. I didn't even have all the required ingredients and they were still very good. I microwaved them and put some salsa inside as well. I have these a lot for lunch!

Lentils and Rice with Fried Onions (Mujadarrah)

Very simple yet good. If you like beans and rice you will like these. My husband made them into burritos for himself with sour cream and grated chedder cheese....he loved them. I just had a bowl with a dolup of sour cream and some cheese on top. We will cook this again but add more onions and more spices.
