Banana Oatmeal Cookie

Light, fluffy, and delicious! I increased the cinnamon to a full tsp. and also added about 1/2 cup of cinnamon chips. When they cooled, I drizzled the tops with melted vanilla candy coating wafers. The texture is so light and airy that you want to just keep eating them.

Lemon Snowballs Cookie

Very light and lemony. I followed the recipe without making any changes. The only adjustment I would make is perhaps shortening the baking time, as the bottoms were a little darker than I like.

Butterscotch Gingerbread Cookies

I followed the recipe the first time I made these with the exception of adding about 1/2 the bag of butterscotch morsels instead of the entire bag. They were wonderful, especially right out of the oven. The gingerbread spices are subtle and the butterscotch blends beautifully with them; a combination I never would have thought would work. I will be making these again.

Meatball Cookies

These cookies are very similar to a traditional southern Italian Christmas cookie. The chocolate is subtle and the spice is not overpowering. I did not have walnuts, so I substituted pecans. I really didn't have to adjust the dough and I did not refrigerate it before rolling into small balls. They baked perfectly in 10 minutes and were moist and tender. Will definitely make these again.

McCormick® Gingerbread Men Cookies

This was an absolutely wonderful dough to work with! I followed the recipe exactly and refrigerated the dough over night. I had no difficulty mixing in the flour with my Kitchen Aid mixer. I baked for 8 minutes and they came out slightly crispy. The cookies held their shape well after baking and I decorated them with a thin glaze and sprinkles. Will definitely make again. One more thing; I rolled the dough out between two sheets of parchment paper. This eliminated the need for extra flour.

Easy Toffee Bars

I make this every year as part of my Christmas cookie trays and everyone loves it. I use the non-stick foil or parchment paper to line the pan. This way the pan stays clean and everything comes out easily. I have used cinnamon graham crackers and Keebler Club crackers. Everyone seems to like the salty club crackers the best. Don't put the chocolate back in the oven! The chips will melt fine with the residual heat. Give them 5 minutes and then use a flat offset spatula to smooth the chocolate. I sprinkle the top with red and green sprinkles for the holidays, but sliced toasted almonds are very good also.

They taste just like the sesame seed cookies I buy at Italian bakeries. I followed the recipe as written and baked them for about 12 minutes. Next time, I will make them a little larger; I made them a little small.

Manicotti Shells

I've used this recipe for many years. I mix all the ingredients in the blender and then let it sit for about 30 minutes before I use it. Perfect filled with a mixture of ricotta, Parmesan, eggs, and parsley and baked with sauce.

Quinoa with Chickpeas and Tomatoes

A tasty and high protein vegetarian option or side dish. I cooked my quinoa in organic vegetable broth because it gives the grain more flavor. I also used a little chopped onion and cilantro in place of parsley. This is a great base recipe that can be adjusted according to your desire or what ingredients you have on hand. Will be using this a lot as the weather warms up.

Fudge Puddles

This cookies was simple to make and looked lovely when finished. I sprayed the mini muffin pans with a little Pam before filling. I used all semi-sweet chocolate for the filling because I didn't have milk chocolate. I put the filling in a large ziploc bag with a star piping tip and piped it into the shells. It looked very nice, especially when topped with a pecan half. Would definitely make again. May even try white chocolate with a little peppermint and use all butter instead of peanut butter in the cookie.

Beef Tips

I also used the crockpot, making this an easy weeknight meal. I did not add salt or use the vegetable oil. I used a total of 1/4 cup of soy sauce and Worcestershire sauce mixed together and about 1 cup of water. I cooked at low for 8 hours and then mixed the gravy mix with 1/2 cup water and stirred it in. The gravy was not quite as thick as I liked, so I mixed a little corn starch with water and stirred it in and it thickened up perfectly. The family said they really enjoyed this.
