Beef Tips
I also used the crockpot, making this an easy weeknight meal. I did not add salt or use the vegetable oil. I used a total of 1/4 cup of soy sauce and Worcestershire sauce mixed together and about 1 cup of water. I cooked at low for 8 hours and then mixed the gravy mix with 1/2 cup water and stirred it in. The gravy was not quite as thick as I liked, so I mixed a little corn starch with water and stirred it in and it thickened up perfectly. The family said they really enjoyed this.

Fudge Puddles
This cookies was simple to make and looked lovely when finished. I sprayed the mini muffin pans with a little Pam before filling. I used all semi-sweet chocolate for the filling because I didn't have milk chocolate. I put the filling in a large ziploc bag with a star piping tip and piped it into the shells. It looked very nice, especially when topped with a pecan half. Would definitely make again. May even try white chocolate with a little peppermint and use all butter instead of peanut butter in the cookie.

Quinoa with Chickpeas and Tomatoes
A tasty and high protein vegetarian option or side dish. I cooked my quinoa in organic vegetable broth because it gives the grain more flavor. I also used a little chopped onion and cilantro in place of parsley. This is a great base recipe that can be adjusted according to your desire or what ingredients you have on hand. Will be using this a lot as the weather warms up.
