Cauliflower Gratin

A good recipe for cauliflower! I made mine with cream of chicken soup and diced ham with excellent results. I think that it would also be tasty with halved cherry tomatoes mixed in as well.

Roasted Garlic Lemon Broccoli

Homemade Black Bean Veggie Burgers

We liked this recipe very much! I would recommend doubling the recipe. I am not a big fan of peppers, so only used 1/2 of what was called for, and my husband, the pepper lover, still liked them. No problem with the burgers falling apart, but I did mash all the ingredients together by hand to get them fully incorporated. It really did look a bit like chunky hummus when I was through hand-mixing it. I baked mine in the oven in an olive oil coated pan with good results. Excellent with sour cream!

Fennel Soup II

This was weird, but good. I ended up making this with a cube of beef bouillon cube and 1 can of beef broth, since my fennel bulb was pretty large. I added 1/4 teaspoon of red pepper flakes, and 1 teaspoon of black pepper for a little kick. I did not add the olive oil at the end because that seemed like it wouldn't add much to the flavor. I had never had fennel before, and I found that it was a nice change from the monotony of winter-time vegetables. It definitely did not taste like licorice. I would make this again, but would probably add cut-up polska kielbasa sausage to it since my family loves the flavor of meat.

Meaty Potato Leek Soup

This recipe took longer than the stated 1 hour and 35 minutes. From stove to table it was about 2 1/2 hours for me. I don't know how you could do it in 1 hour and 35 minutes unless you have pre-cooked bacon and a stick blender. If you have a regular blender or food processor, it takes some time to puree the batches. And the result of the pureeing was a consistency of leeky Cream of Wheat with too much milk added. Not visually appealing or texturally desirable. I followed this recipe exactly and found that the delicious flavor of my smoked turkey legs was almost completely masked by the taste of the leeks. I would have been better off not putting those delicious guys in the soup at all and using them in another recipe so I could enjoy them. If I were you,I would find another potato-leek soup recipe. If you happen to have it, the leek and potato soup recipe in Dorie Greenspan's "Around My French Table" (page 66) is a good one. Otherwise, look elsewhere, friend, look elsewhere. This "Meaty Potato Leek Soup" recipe is not awesome and it takes a ton of time.

Detox Salad

The Belgian endive combined with the apples and watercress was a good combination. However the salad dressing was a bit underwhelming. We all found the raw garlic taste overpowering, and we LOVE garlic. You really couldn't taste the flavor of the walnut oil or the vinegar at all, just garlic. It might be better if you sautéed the garlic before adding it to the dressing. If I make this again, I think that I would try this, or maybe make a different dressing entirely. I'm truly at a loss as how all the other reviewers loved this dressing so much.

Cabbage Rolls II

I had high expectations of this recipe, but it was only good, not great. The proportions of the sauce, meat filling and cabbage leaves seemed perfect to me, which is pretty impressive. But I just felt that the filling made the dish taste like meat loaf wrapped in cabbage leaves. It really needed something to spice it up. If you make this, I would suggest looking at other comments for suggestions. Maybe a ton of garlic? Chopped celery? Fresh dill? I'm at a loss, but it definitely needs something.

Spiced Parsnip Soup

this recipe was a big disappointment. I found that I disliked the combination of the sweet parsnips with the curry powder. Perhaps it would be better with coconut milk. But ultimately, if I'm going to go to the trouble of making a soup like this, I think that squash or pumpkin soup would be yummier.

Pan Fried Brussels Sprouts

Sadly, they still taste like brussel sprouts. Good try, though. Only bacon or cream can make these suckers palatable. This recipe is not the answer to your prayers if you are a brussel sprouts hater like me. This recipe might work out if you like brussel sprouts a little bit.

This recipe didn't work for me. I tried to give it a little more flavor by adding diced onions, bell peppers, fresh garlic, extra oregano and mushrooms, but still just didn't come together
