Clam Chowder Canadian Military Style

Reviewed: Mar. 5, 2003
Good recipe! 4 out of 5 people in our house loved this; 15yo son wouldn't even try it, thinks clams are slimy and gross. I used leftover boiled potatoes that I mashed slightly with potato masher before adding clams when rest of soup had heated up. I used previous reviewers ideas of using Old Bay Seasoning and Basil, as well as a small bottle of Clam Juice and 3 cans of minced clams. Served it with Pecan Sticky Buns by Stefanie Sellars. Wonderful, hearty meal. Thanks Gail.

Chicken, Stuffing and Green Bean Casserole

Reviewed: Mar. 5, 2003
Hubby and kids loved this! I doubled chicken amounts (leftovers from chicken fry a couple nights earlier), added a packet of dry turkey gravy with 1 soup can of water....mixed gravy, water and soup together before adding turkey, beans and spices. Also, I used a whole cannister of chicken stuffing mix from Wal-mart. Cheese didn't seem to add much. Next time I may try adding it to the chicken/soup/etc mixture. But kids did top with more cheese; hubby and I didn't. Will add to menu rotation...very well received. Thanks Cathy!

Apple Strudel Muffins

Reviewed: Feb. 26, 2003
Big hit! Made these to go with Asparagus Chicken and Salad for daughter's birthday dinner. Used paper liners, 2 cups of chopped apple and 1/4 cup cinnamon applesauce in batter, as previously suggested. Moist and delicious! I did get about 15 muffins, maybe due to additional ingredients mentioned above. Either way, they were great. Hubby took remaining 4 to work the next day to enjoy for coffee break. Thanks Nikki for this keeper recipe.

Asparagus Chicken

Reviewed: Feb. 26, 2003
this was wonderful! made it for my daughter's 18th birthday party with our family and grandma. Used Gloria Pitzer's easy hollandaise sauce, which uses no egg yolks or butter (think lite mayo). I also baked chicken with sauce, then put 4-5 microwaved asparagus spears along out sides of 13x9 pan, sprinkled with combo of shredded cheeses. Served with boiled potatoes which was used to savor sauce, salad and apple strudel muffins (from this site). Big hit, will be used for those special occasions to WOW guests. Thanks Teck.

Tomato Chicken Parmesan

Reviewed: Feb. 26, 2003
This has become standard fare at our house! Very easy and economical and tasty. I use a combo of pounded-thin breasts and boneless, skinless thighs--hubby's not fond of white meat. Serve with salad and breadsticks or garlic bread and you've got a complete, satisfying meal! Thanks Alicia

Great Garlic Bread

Reviewed: Feb. 26, 2003
No More Store Bought Frozen for Us! This was great...used hamburger buns and 1/2 cup Garlic Spread from Sam's Club (premade, 24oz, garlic minced and parsley and romano cheese in margarine spread tub for those not familiar) melted in microwave. YUMMY! Gobbled up by all with spaghetti and salad for dinner. I've also had this done with monterey jack cheese, as well as spread on two long halves and baked in foil or done on the grill. Very versatile (sp?)....thanks for the keeper.

Banana Cake VI

Reviewed: Feb. 17, 2003
this cake has wonderful flavor. Halved frosting like previous reviewers suggested and my hubby usually doesn't care for it. First night, it rec'd 3 stars; after sitting overnight in the frig to chill really well...it rec'd 5+ stars and hubby said it would be even better with more of that scrumptious frosting....go figure! He took 2 large pieces to work today for coffee bread. Ours rose to 3" high! Try this, you won't be sorry. Thanks for the great recipe.

Apple Dumpling Cake

Reviewed: Feb. 9, 2003
This is delicious! Made this last night as dessert for "Build-Your-Own'Sub" night, 5 kids (2 were kids' friends); 2 adults. I followed the previous reviewer MaMaDC and sprinkled cinnamon and sugar on the apple before the batter. The house smelled heavenly; everyone kept asking what it was. I used 3 lbs of Macintosh apples. I think next time I'll use tablespoons to dollop the batter, as I made it first and it was thick. Didn't affect the taste, still wonderful. We didn't have ice cream or whipped topping, so we topped it with milk. Can't wait to try it with french vanilla ice cream! It's going into my recipe file for a regular in this house's menu rotation.

Beef and Bean Chimichangas

Reviewed: Feb. 7, 2003
These received 2 forks up from everyone at our table, adults and children alike. Made them according to what I had on hand....used 2 cups salsa for taco sauce; our refried beans were with cheese; had a pkg of 10 flour tortillas and we topped them with lettuce, black olives and more cheese. Took a previous reviewers advice and sprayed our 13x9 with garlic-flavored spray, as well as the tops of the tortillas. Yummy. Will add to our menu rotation. Thanks Nicole, this is a great change from gorditas and burritos or tacos.

Peanut Butter Bars VI

Reviewed: Feb. 7, 2003
My family absolutely love these. We crushed 4 cups of cornflakes and it worked out great! Used a 9x9 pan for thicker bars. To dress them up, top with melted chocolate chips or melted canned chocolate fudge frosting....yummy! These are the best Dawn, thanks for posting this.

Garden Veggie Pizza Squares

Another Super Bowl and regular party request. Doubled crescent rolls for a 15x10 pan. Added 1/2 cup lite mayo and 1/2 cup lite miracle whip to cream cheese. Veggies of choice were finely chopped broccoli, diced and seeded cucumber, sliced black olives, remainder of petite canned diced tomatoes not used in the BLT dip, 1/4 sweet onion diced fine, and 1 cup fancy shredded lite cheddar cheese. Always a hit!

BLT Dip

Reviewed: Jan. 27, 2003
GREAT Recipe! Made night before for our annual Super Bowl party...took several previous reviewer tips and used well-drained petite diced canned tomatoes; used 1/2 cup mayo and 1/2 cup Miracle Whip. Added just a couple Tablespoons of minced green onion. Served with Ruffled chips. It was a big hit and devoured. 15-y-o Son said fill a pita or tortilla shell and spread with lettuce for an instant trip to summer. Can't wait to fill a bread bowl with it and serve bread pieces on the side. Lots of versitility. Thanks for this one.

Big Soft Ginger Cookies

Reviewed: Jan. 24, 2003
These are great! I didn't have all individual spices, so I used pumpkin pie spice. Also, I used small meatball/cookie scoop from Pampered Chef and got about 4 dozen smaller cookies, which required extra sugar for rolling. Flatten them with the bottom of a glass. Baked them only 8 minutes. Yummmmmm.

Amish Bread

This is delicious! Blew the top off my small, older Regal BM...next time I'll reduce flour and water. Also subbed butter for oil, as I was out. Great for sandwiches! thanks for the great recipe.

Deli Style Brisket

Reviewed: Jan. 24, 2003
Got mixed reviews on this one. Used 4 lb beef roast, smothered it with onions, followed remainder of recipe to a T....house smelled wonderful while it cooked, debated most of the day whether we'd eat it on deli buns with condiments of choice or make mashed potatoes and serve like roast. Kids and I had it on buns-hubby had it on Amish Bread (from this site-wonderful BM bread) covered in gravy. It needs more spice...maybe bay leaf while cooking or more garlic. Don't know if I'll try it again.

Portuguese Sweet Bread I

Reviewed: Jan. 21, 2003
My family devoured this loaf. Pushed the top off my old Regal Bread Machine and overflowed the pan, but it is delish! Am making a second loaf today, cutting back to 3/4 cup milk and 2-1/4 cups high gluten flour...smells heavenly. Hubby declared it the best out of the machine ever! Thanks!

Mmm-Mmm Better Brownies

Reviewed: Jan. 12, 2003
These were good, had all ingredients on hand and made them on the spur of the moment late at night. A little doughy/soft in the center, but had good flavor and smelled wonderful while baking. Going to try a few others, searching for one similar to the families favorite boxed.

Beef Pot Pie III

Reviewed: Jan. 7, 2003
This is delicious! Followed previous reviewers tips and made the following changes: dredged meat in flour and cut way back on the cornstarch; added bay leaf to simmering meat, then removed before combining with other ingredients; spiced up with thyme, rosemary and fresh ground black pepper; doubled the sauce; made like casserole and only topped with one crust...but hubby said he'd like it next time as a pot pie with 2 crusts, as that was his favorite combined with meat/sauce. Also, next time I'll double the meat for my hungry growing teens. Thanks Stephanie.

Egg and Sausage Casserole

Reviewed: Jan. 7, 2003
GREAT! Made this for dinner last night. Didn't have pork sausage, so I subbed for 1/2 lb bacon/1/2 lb honey ham; added 3 chopped tomatoes. I used 3 cups light mexican cheese. I also exchanged oregano for freshly ground black pepper, minced garlic and onion. Put 10 eggs in, as previously suggested, next time I'll try 12 as it was a little dry. But everyone gave it 2 forks up...thanks LeAnn, we have a new favorite quiche.

Honey Mustard Dressing II

Reviewed: Jan. 2, 2003
Made this New Year's Day for Beef/Chicken Fondue dinner...it is WONDERFUL! Much like Wendy's for Chicken BLT salad. We quadrupled the dressing, put it on salad and used it as a dip for fondue. Didn't change a thing...it's a keeper and everyone, even our picky eater, loved it! It will now become our favorite over homemade Ranch, which has been our standard for the past couple years.
