Excellent base for my recipe. I'm watching my figure so I altered this recipe. I seasoned 2 boneless chicken breast with McCormick Cajun seasoning, browned in 1 tbs of EVOO and set aside. In the same pan I cooked about 3 TBSP of finely mined onions (hubby isn't much of an onion fan) When the onions start to brown lightly I added 1 egg mixed with 1 tsp of water (without additional oil ) I used leftover Uncle Ben's "boil in bag" brown rice, which is exactly 2 cups. Toss the cold rice with your onions and egg for a few minutes. I added "low sodium" soy sauce ( I didn't measure, just pour a little, stir and taste) I added the chopped chicken breast, stirred for several minutes. Since I used the cajun seasoning on my chicken and it really gave my rice a nice kick. Honestly, I wasn't expecting this mellow heat but trust me when I say it was the perfect amount of spice. No black pepper needed unless you just prefer it more on the spicy side. Lastly, I added about a cup of tender broccoli , lightly tossed and served. Yall my husband ate it up! Shoot I may never buy fried again! This recipe is a winner for those who want fried rice but without ruining their diet. The boil in bag rice is a real life saver. Boil an extra bag the night before and have an awesome dinner the next day. Thank you bunches to the creator of the recipe! XOXO
