About this Cook
I have a hard time following recipes without adding something. Not such a good thing if you want to know if a recipe is good. I praise the leftover. Add something to it and make it even better. A get out of jail free card for cooking. Especially for making soup.
My cooking triumphs
Doing multiple cakes for weddings.
My cooking tragedies
Christmas dinner, Everything was in the oven keeping warm and perfect. I cleared the top rack to brown some rolls with the broiler on high. Burned the rolls, removed the rolls in a panic forgot to turn off the broiler and then burned three other things. We scraped everything off and it was fine.

Bread Pudding II
Love it!!! I always double it and cook it about 20 min more. Cover it with foil 30 min in just to make sure it does not burn, have not tested it without doing this. I have been using one french bread loaf (on the larger side) .89 cents in the day old section at the grocery store. I sprinkle it with quite a bit of cinnamon before adding the liquid to keep it on top of the bread. I use less sugar (half brown) but top it with whipped cream cheese mixed with a little bit of powdered sugar. Just skipping it around, not too heavy. My daughter loves it and it is a good way to get some egg and milk in her while still feeling like she is having a sweet treat. Have also topped it with many kinds of fruit. Anything goes. Nuts. Yes. I just timed my prep time and it was actually about 13 min. Not rushing. Not 30 min like the recipe says. Kids also like to break the bread into little pieces.

Happy Roast Chicken
Used chicken breasts and adjusted the amounts for my taste. Great combination of ingredients!

Easy Chicken Curry
I have to give it five stars because I don't know if it was good or not. I hate when someone does not make the recipe as printed and then gives it a bad review. I did a Sweet Coconut Chicken w/ Pumpkin: I did 3/4c. onion (caramelized w/ a little garlic) added 1c. milk, 1/2c.shredded coconut, a little hoisin sauce & fish sauce. Only 2 Tbsp. sweet curry powder 1/3 c, seemed way too much. And then I added 1 Tbsp. OJ, about 1/2 c. pumpkin and sweetened it with brown sugar to taste. It Was Awesome!!! Cooked the chicken in a separate pan in olive oil salt and pepper and added sauce. Served over white rice.
