Homemade Black Bean Veggie Burgers

As written 4 stars. 1/3 kids found this a little spicy so I will play with the seasoning next time. Definitely needed to increase the bread crumbs in the mix to get a better consistency. When baked, did not crisp on the outside, so texture was a little off for the meat-eaters in the crowd. Would recommend a quick, light fry to get the outside a little crisper. Definitely serve with toasted buns and lettuce to get a little more texture as well. Will be adding this to the regular rotation.

Slow Cooker Teriyaki Pork Tenderloin

Made this tonight and I thought it was good. Did read the other reviews and the 4 hours on high for tenderloin did make me nervous. I did 4 hours on low and it came out perfectly. Was moist and tender. Definitely brown the outside otherwise you will have grey meat; will taste fine, but not look appetizing.

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Made these tonight with the yogurt/applesauce substitution others used. These were great! Moist, sweet, very good. Make sure you drain the strawberries to avoid the gooey factor. The strawberry banana combo is perfect.

Butternut and Apple Harvest Soup

This recipe is fantastic. Made it for Thanksgiving and it was the hit of the dinner. Definitely use the white wine; can easily do without the cream. I served it with a dollop of sour cream and chives to garnish.

Chocolate Covered Caramels

Definitely not for those who don't like a mess, but these are amazing. I will never buy store bought caramel again. My husband said this was the best caramel he ever tasted. Dipping can be difficult. I used another reviewer's suggestion and used a pastry brush. Thanks for the recipe!

Best Big, Fat, Chewy Chocolate Chip Cookie

Very good cookie that lives up to its name. I found using soft butter (or margarine) worked better than melted butter to keep the cookies chewy rather than crisp. Make a double batch as these disappear very quickly!

Spinach and Artichoke Dip

I really enjoy this recipe and whenever I make it I get rave reviews. For those who think it bland, try adding one clove of garlic crushed, and a splash of lemon juice.
