Wonderful recipe for a cold night, served with stone baked bread. I will modify a few things next time though. 1. Cut back on bacon grease as others have stated & sub another kind of oil if needed to cook onion in(olive or canola) to cut back on fat content, also a little too much bacon favor taking away from potato flavor. 2. Had to add more stock/milk to make thinner b/c it was really thick as written. Made full recipe and froze 1/2 so hopefully freezing works. Will definitely make again. Thanks for the wonderful recipe!
