Mint Tea Punch

Reviewed: Jul. 8, 2004
I'm leaving a second review with a helpful note. We've found the tea tastes much better the second day after preparing. I try to let it in the refrigerator overnight and it's great the next day. It seems to take a while for all the flavors to blend together well. Also, now when I make it, I eliminate the tea bags. The result is a refreshing citrus mint with nice color. I continue to use stevia instead of sugar, thus a caffeine free, sugar free summer drink.

Honey Mustard Sauce

Reviewed: Jul. 6, 2004
Loved this but did make changes based on suggestions of others - used half the mayo, used both yellow and brown spicy mustard. Great with chicken fingers.

Veggie Lasagna Florentine

Reviewed: Apr. 6, 2003
We enjoyed this but would recommend some significant changes in the proportions. There is far too much sauce and too many noodles. I would suggest 1 can of tomatoes and 6-9 noodles. Other changes I made include adding additional fresh garlic, using tomato sauce instead of crushed tomato for extra flavor, & less basil. I also used 8 oz of lite cottage cheese and 8 oz of tofu mixed together in place of 1 lb. cottage cheese. We enjoyed this healthier version of lasagna. My children didn't even comment on it being different from the meat lasagna I normally make. The sauce has a wonderful flavor, especially with added fresh garlic. Next time, I'll try whole wheat noodles as suggested by another reviewer. Thanks for the recipe !

Creamy Potato Leek Soup II

Reviewed: Feb. 20, 2003
This was fabulous. I kept the skins on the potatoes. Next time I'll cut back a bit on the bacon and use either milk or light cream to cut back on the fat. I doubled the recipe and it's gone already!

Chili II

Reviewed: Feb. 20, 2003
This was very meaty, not too spicey, and best of all - the flavor was superb, with lots of depth. The red wine and vinegar give it a fabulous taste. I doubled the recipe and will be enjoying it for a long time.

Winter Fruit Salad with Lemon Poppyseed Dressing

Reviewed: Jan. 3, 2003
This was disappointing for me. The flavor of the swiss cheese just didn't seem to blend with the rest of the salad.

Veggie Corn Dogs

Reviewed: Jan. 3, 2003
This was fun for the kids to do and they loved eating them too. I used beef hot dogs. You have to use the grand size biscuit. The dough must be flattened out a bit first. Even my four year old could handle this. For added texture and flavor, I rolled the wrapped dogs in corn meal. Very good.

Amish Sourdough Pancakes

Reviewed: Jan. 3, 2003
Enjoyed this very much. Has a great flavor. For some added flavor I added diced apples and cinnamon. Also used Bisquick instead of buttermilk mix because that is what I had. I think any pancake mix would work great. Wonderful!
