To Die For Blueberry Muffins

These muffins are winners at my house! I always use buttermilk when making this recipe and if I don't have any then I use whole milk. I do find that I tend to need a bit more than 1/3 cup of milk. I also add 1 tsp. of vanilla and I don't make the topping (just to save on calories). But I have made it with the topping before and it was just as good. This is one recipe that I use over and over.

Great cookie and so delicious. I use 1 cup of butter and no shortening. I just can't bring myself to use that stuff. Other than that I followed the recipe exactly and it is one of the favorities in my house.

Lemon Blueberry Bread

Yes, this was a very good bread and I got the thumbs up from my hubby. I followed the recipe to a T and the only setback was that I had it in the oven for exactly 60 minutes and it was about 5-7 minutes too long. So the bottom wasn't very pretty but it was still edible. Next time I'll make two loaves- blueberry & cranberry!

Italian Sausage Tortellini Soup

This recipe was great and the hubby and kids liked it. I didn't have any red wine so I just used more water and I opted to leave out the green pepper. I also used a can of Italian style diced tomatoes instead of tomatoes. I served this with a fresh baguette and it was perfect. I will definitely make again.

Banana Crumb Muffins

I made these muffins especially for my husband because he does not like nuts in his desserts and they were a hit with him. They were very moist and delicious and I used 4 ripe bananas instead of 3 and added 1/2 teaspoon of vanilla extract. I had enough batter for 12 muffins but I did need more baking time. I can finally bake something different than banana-nut bread!

Beef Enchiladas II

Flour tortillas? Enchiladas are supposed to be made with corn tortillas in order to get more of an authentic Mexican dish. The majority of my family is from Mexico and the thought of using flour tortillas is just not right. I'll stick to the recipes my mother and grandmother taught me.

Parmesan Broccoli Balls

This recipe has been a hit every single time I've made them. I was afraid my husband would not like them because he is picky about vegetables, but he absolutely loves them. The only thing that I do different is that I mince about 1/4 of an onion and I tell others to use as much onion according to their taste preference. You can also even use two boxes of stuffing and they still turn out delicious!
