Ground Beef Shepherd's Pie

I didn't have any potatoes to put on top of this recipe, but it still came out great. Instead I used a cheese topping. I also added some leftover veggies from the fridge such as corn and peas. This had all of our proteins and vegetables in one dish! Very easy to make--simply throw it together! I suggest making enough for more than one meal, too, because it refrigerates well. The kids loved this one! :-)

Roast Beef and Cheese Roll Ups

This is a great dish to make. All of my kids loved it including the toddlers. I use pre-seasoned (Italian style) tomato sauce instead of pre-made spaghetti sauce for even less sugar and carbs in the recipe. I also make more than I need for one meal since this recipe refrigerates well. A defininte "keeper" in my recipe box. :-)

Burgundy Pork Tenderloin

I used my Dutch quart oven to cook this while running errands. This was some of the most tender meat I've ever eaten. Because my husband is counting carbs, I left out the wine, but used the veggies and added ginger. It still was very tender and flavorful.

Butternut Squash Bisque

A great flavorful soup! Next time, however, I will use half and half with the same amount of heavy cream to dilute the base more. (I don't usually measure so I may have used more than the 4 cups of squash the recipe called for. It turned out quite thick.) I served this with lean pork, San Francisco veggies and a green leaf salad with Parmesan cheese. Very, very elegant dinner with no fuss.

Awesome Slow Cooker Pot Roast

This was very easy and delicious. I used a shoulder roast because it was on sale; it turned out juicy and the gravy was awesome! My family didn't use all of the gravy with dinner so I've used it with other meats too.
