Black Bean and Salsa Soup

I sauteed a little bit of onion, garlic and the cumin in a tsp of oil and added it to the beans, salsa and broth. (I didn't have veggie broth on hand so I used chicken broth.) This quick recipe is a winner for something healthy!

Delicious Raspberry Oatmeal Cookie Bars

Great recipe! I added 3/4 tsp of cinnamon to the mixture and after I took the bars out of the oven and let them cool, I topped with vanilla glaze which I also found on this site.

Polish Cabbage Noodles

This is a family favorite. To save time, I used 1/2 to 3/4 a bag of shredded cabbage/carrots and only used 1/2 of a red onion since my family doesn't like onions very much. For another dimension of flavor, I cooked 4-5 pieces of bacon (then set aside), drained all but one Tbls of fat and sauteed the cabbage and onion in the bacon fat with just a tsp of butter. Then I added Hillshire Farm Sausage that I sliced, cooked and drained, the cooked noodles, and half a can of chicken broth. I let it all simmer for about 5-7 minutes. Then I added about 2-3 Tbls of sour cream to the dish, mixed it all together and seasoned to taste with salt and pepper. I crumbled the pieces of bacon and sprinkled over the top of the dish. Serve with a salad and you have a great meal.

Best Big, Fat, Chewy Chocolate Chip Cookie

These cookies are simply wonderful. I followed the directions to the letter and they turned out perfectly. I think the keys to this recipe is the use of butter, the egg yolk and the sifting of the flour. When mixing the batter, you'll see it doesn't have the texture or look quite like the traditional toll house recipe, but that is okay. Once they are baked, they are great. It is the only chocolate chip cookie recipe I'll use from now on.

Chicken Supreme III

You do NOT need all of that butter-1/4 of a cup will work just fine. Cut down on the water added to the stuffing to one cup and exchange a 1/4 cup of water for the soup to a 1/4-1/2 cup of milk. Add a can of drained mushrooms, some italian seasoning to the chicken and the recipe will work great. Preparing it this way, it wasn't greasy or mushy. I also didn't use an entre cup of cheese. You'll get all of the flavor from just a half a cup. Good luck11

Cheesy Potato and Corn Chowder

This is an easy and great recipe to prepare when you want a quick, comforting meal. I used skim milk to cut back on the fat and regular mexican cheese rather than the processed kind. I also kept the skin on the potatoes and sauteed some diced chicked in garlic before adding it to the soup. This is a winner!!
