Creamy Chicken and Wild Rice Soup
Delicioso!! I made some changes after reading others reviews. First, I boiled rice with chicken stock (instead of broth) from the beginning to cook wild rice thoroughly. Reserve 2 cups of chicken stock and keep cold in fridge. Then, I added a chopped medium sized onion and carrot each and a drained 4oz of canned mushroom. I cooked them in butter until soft before adding flour. Most importantly, before adding creamy roux mixture into the pot, add 2cups of cold stock to the mixture to prevent lumps. Oh, I used half&half, also. This soup tastes like chicken tetrazzine in soup form :)

Cowboy Mashed Potatoes
This dish is AWESOME! I didn't have exact ingredients on hand, so I changed/added a few. First of all, I only used 1cup of corn and added 1cup of sweet peas instead to make it look prettier. My family loves cheese, so I used 1.5cups of shredded Mexican cheese instead of 1/2 cup cheddar. Also, I added 6 strips of crumbled bacon - HUGE HIT!!! I served it with sour cream and extra cheese, almost like loaded potatoes. Everyone cleaned their plates, and I was asked to make again soon! ;)

Mini Meatloaves
This recipe is PERFECT! I didn't need to make any changes to the recipe. With the leftover, try mini meat loaf melt sandwich. I melt a slice of Swiss or provolone cheese on top of meat loaf with pan-buttered toasts, like grilled cheese. YUM!
