Made this last night so deserves the 5 star rating!! this was my first time making chicken pot pie. I doubled the recipe and will definitely make this again!
What I did differently was to bryne (salt water) 5 chicken leg quarters for a couple hours in the refridgerator. I didn't have any chicken breast on hand but that would have really made the flavor in your mouth pop even more!
Then cooked the chicken for 1 hour in the bryning mixture. Took the chicken out to cool and used the broth for the recipe so there was no need to use can broth. After chicken cooled I took the chicken off the bone in nice bit size pieces.
I used 1 16 oz bag of mixed vegetagles and chopped 4 stalks fresh celery, cooked them in just enough of my left over chicken broth until tender.
Instead of using an onion I used onion soup mix in my roux so no need for the extra butter, next time I'll use half the packet onion soup mix.
All I had to add was pepper for seasoning. I also used evaporated milk.
I also made my own pie crust which was a 5 star rating "Ruth's Grandma's Pie Crust" here on All Recipes.
