Cincinnati Chili I

The best way to make this REALLY traditional is to use an immersion blender at the end to make the sauce smoother -- less meat texture. It looks more like thick gravy, but is surprisingly just right for this recipe.

Colorful Corn Chowder

I used a Poblano pepper, rather than the green bell, and roasted it with the red bell pepper. Since I wanted it savory, rather than sweet, I skipped the carrots. Used diced potato like some reviewers. To help thicken it, I used 5T of masa harina (since it's corn flour), which I mixed with water before adding. I also used some chipotle and ancho pepper (the kind you can shake on).

Scarlett's Best Ever Sugar Cookies

I used a 1-1/2" scoop (like a small ice cream scoop), packed, flattened with a glass and sugar, and they turned out perfectly. My hands stayed clean, and it was really quick.

Cheesy Vegetable Lasagna

The only problem I had with the recipe was the fact that it did not specify how many layers to make. I made two. I used 32 ounces in ricotta, rather than using any cottage cheese. I substituted a cup of pesto for the spinach to give it a little more flavor. In addition, I julienned the carrots and zucchini rather than slicing them, with a mandoline. I also used 4 tablespoons of butter, melting it in the saucepan, before adding the flour. The flour has to cook a little with the butter to get rid of the "flour-y" flavor.

Cholay (Curried Chickpeas)

Very good. I substituted Petite Diced canned Tomatoes (one can)for the fresh tomatoes, since it's past the good tomato season; and curry powder for the coriander and cumin only because I feel it's a little more authentic that way. Served it on rice. Tasted like we have at Indian restaurants!

Poblano Chicken Enchilada Casserole

Cheesy Vegetable Soup II

Wonderful in every way!! Very cheesy, and the combination of vegetables is perfect. I'd recommend mixing the flour with some of the milk prior to adding to the rest of the milk,, and then add the cheese soup. No lumps that way. Made 3-3/4 quarts--7 big servings.
