Carne Adovada

This is really good. The meat was so tender. I also used less salt and regular chili powder. I served with tortillas and garnished with onions and cilantro. Finally a recipe the husband says is 5 stars.

Beer Batter

A nice basic batter. I use when deep frying chicken. I first dip the chicken in flour then in batter and deep fry. Really good.

Restaurant-Style Buffalo Chicken Wings

Reviewed: Sep. 11, 2003
These were fabulous. A little too spicy for me but not the husband. I deep fried then dipped in sauce until coated and baked just a little to "set" the sauce. Even good w/o sauce.

Apple Crumble Pie

Reviewed: Sep. 23, 2003
This recipe was really easy. I decided to try this as I am hopeless at making pie crust. I liked the idea that it had a crumb topping . Next time I will mix the sugar and apples together first and then put in crust as it seemed it was was not sweetened evenly. Also I will turn down the temp. as the crust was done before the apples. But overall a good, easy recipe.

Really delicious! So fast and easy to prepare. Watch the salt. I find I don't have to add any if the ham is salty. Thanks for a keeper.

Crayfish or Shrimp Pasta

Reviewed: Nov. 30, 2004
This is really good and simple. I've been making it for a while now. I add a little salt if I use saltless Cajun. Definatley needs less Cajun if it has salt in it. Kids like it as well.

Ultimate Twice Baked Potatoes

Reviewed: Jan. 26, 2005
Excellent. I used potato topper instead of regular sour cream and left out the green onions. Not very hard to make. Might have to bake potatoes a little longer. Big hit with the kids also. Make lots they are even better left over.

I've been making this for a long time now. Turns out great every time. I also dice the onion small instead of slices.

Easy Mexican Casserole

Reviewed: Apr. 6, 2005
Not to bad. I browned the hamburger with some taco seasoning. I also put the tortilla chips on the top instead of the bottom out of fear they would get soggy. Didn't bake it with the tomatos instead topped it with tomatoes, lettuce and extra s. cream. Kids commented it tastes like chili.

The Whole Jar of Peanut Butter Cookies

Reviewed: Apr. 27, 2005
Extremely Delicious. Very easy. I used Jif chunky peanut butter and left out the nuts as I didn't have any. Definatley needs to chill for the 2 hrs or it's sticky. I dipped the fork in sugar as I flattened them. They are chewy if slightly underbaked, 11 mins worked perfect for me.

Shrimp Burritos

Reviewed: Jun. 26, 2005
Really Good. Not as time consuming as it looks. While the rice is cooking you can prepare the other ingredients. The only thing that confuses me is the tomatoes. Are they drained or undrained? I drain them a little bit. Also I have made a few little changes. I add a spoon of canned chopped green chiles to the rice, Used homemade refried beans, raw shrimp fried in a little oil with the garlic. Also I don't use the salsa. The sauce makes it the best. Thanks for sharing ShackL

Freak'n Good Ribs

Reviewed: Jun. 28, 2005
Really Delicious! I marinated for about 22 hrs and they were so tender the bones fell off on the grill. I made the marinade exactly except used 5 lbs of spareribs and the marinade was plenty. They weren't tender even after 2 hrs of baking so I turned the temp to 350 for another 1 hr. I used Sweet Ray's honey BBQ which made me a little nervous as I sampled it and didn't like it, so I mixed it with a little of the marinade and it was good. Even the kids liked it. When the hubby takes a bite and says mmmm good it's gotta be a keeper! Thanks Mike!
