Minute Steaks with Barbeque Butter Sauce

Loved it!! Made for Valentines day and it was so simple and delicious. The Bbq butter sauce really makes it wonderful. So easy and yummy. Will for sure make it again.

Rosa's Carne con Pappas

We thought this was excellent. My husband who is Mexican and I picked this recipe out together. I was hesitant because of some of the negative reviews. First of all it seems this is one of those recipe you make by heart but don't really measure things out. So for a beginner cook it may not turn out as well following the directions exactly. I have been cooking by heart for 19yrs. Let me tell you what I did. I started by first browning the meat only for a couple of minutes(just brown quickly on the outside),remove from pan keep covered. Then I cooked the potatoes until lightly browned then added the onions, finished cooking until the potatoes and onions were soft. Then I put the meat back in(drained off all accumulated juices)and added the salsa and simmered for a couple of minutes. Also the salsa casera was confusing. Our store had different "kinds". Big 29oz cans hot(what I bought because I doubled the recipe), small 7oz cans hot and glass jars that resemble a picante sauce mild and medium. All said Herdez salsa Casera?? Well the metal can is more Rotel tomato type not picante salsa. Loved the canned casera we picked. Served in corn tortillas with sour cream on mine. Sorry for the long review. Just trying to help.

Chef John's Sausage & Shrimp Jambalaya

I am by all means no jambalaya expert but thought this was wonderful. I doubled the recipe and added 1 tbsp or so of homemade reduced salt Cajun season. Followed everything else exact. Used brown rice and cooked 55 mins because it felt a little "crunchy" but decided maybe that's the way brown rice is suppose to be. I actually loved the texture the rice gave it. I was worried after reading other recipes that had so much more spices but chose this one because of the video and reviews. It was perfectly seasoned. Highly recommend you try it.

Pressure Cooker Teriyaki Chicken

I made this per recommendation from my dad who made the night before and said it was excellent. I would definitely agree. Followed recipe to a T and it came out so tender it fell apart. I haven't really cooked a lot in my pressure cooker but found this to be so easy. Hubby said it was little too sweet so maybe I will cut back on the sugar. But I thought it was perfect. Update** A little trick I learned, have a second burner waiting heated to desired cooking temp and move the cooker to that burner after pressure is reached. Cook according to the timing directions. This helps to prevent burning. Thanks

Beef Noodle Shepherd's Pie

I thought this was pretty good for a quick, inexpensive week night meal. I doubled the recipe for my family of 5 + leftovers and had a really full 9x13 pan. I used regular onion soup and 2 bouillon cubes. Wanted to make homemade mashed potatoes but in a time crunch used boxed. Didn't measure the amount of potatoes I put on top, just piled them on. I would say if your meat mix is a little salty just cut back on the salt in the potatoes. It balances out well that way. One last thing I put a few pats of butter on top the potatoes.

Hoot-n Holler Baby Back Pork Ribs

These are the most fabulous ribs I have ever put in my mouth. I did use St Louis style spare ribs and they were so tender and flavorful. I used 1 bottle of marinade and a packet of McCormick's mesquite. I had 2 racks of ribs about 7lbs. Followed everything else exactly. I added a small amount of the brown sugar so I would say that can be a personal preference. Use as much BBQ sauce as you like. Yummy!!

Super BLT

Yummmy!! I've never made BLT's(yes I know what they are) but thought I'd give this a try. It was so good. I made my guacamole the way I always do, just avocados and minced garlic. My family loved them and I will for sure make again.

Chocolate Chip Coffee Cake

I think this is good? I made it in a slightly larger spring form about 10". Since I was using a convect oven I baked for 48 mins, tooth pick came out clean. I cut it after cooling but still slightly warm. At first I thought it was under cooked but then realized it was the bottom that was wet, like it had to much butter. Also the chips all sank to the bottom. Will coat in flour next time to prevent that. I used milk choco. chips and butterscotch. Also swirled ever so slightly the topping into the batter which I used 1/2 brown 1/2 white sugar.

Pecan Pie V

First attempt at a pecan pie. Very disappointed. First off this is my fault not the recipe but I have a deeper pie dish and started with a single batch of filling & it was only half full. Made another half batch and it still wasn't very full. Made another half batch & it ended up being only 3/4 full. I took advice of others and baked at 350 for 10 mins then 50 mins at 300. What I got was a bland thick stew like mess. Can't even cut it. More like spoon it out into bowls. Sorry

Mom's Fabulous Chicken Pot Pie with Biscuit Crust

I made a huge mess! I decided to double this for a family of 5+ leftovers. I put it in a 9x13, got the biscuits on top and realized the pan was WAAY to full. Had to carefully take the biscuits off and transfer to a bigger 10x15 pan. But in the end it turned out good. Biscuits wanted to burn after only 10 mins but I lightly covered w/ tin foil and baked for a total of 40 mins. Canned corn instead of peas and less celery. Also a couple of diced potatoes sauteed in the mix. Will make again.

Seasoning For Tacos

Check your chili powder. I buy really cheap generic chili powder and noticed today that they contain salt. With that in mind I decreased the salt to about 1 tsp. I forgot taco season at 2 stores today and I'm glad I did. This recipe provided nice seasoned beef for our tacos without being overly salty like the packets. Will for sure make again. Thanks.

Chicken and Bacon Chowder

Mmmmm. Yummy. I used cream of chicken and cream of mushroom. Left out the salt because I was using chicken boullion and water for the broth(salty enough). Also decreased the celery. Tastes similar to chicken wild rice soup. Very good and hearty meal. Served with buttered bread. Update: I found a product from Minute Rice, it's 2 individual cups of brown/wild rice that you pop in the microwave for a minute. I added a spoonful to my bowl of leftovers and it was pretty good.

Libby's® Famous Pumpkin Pie

This is the only recipe I've used for several years. I've recently started using only 8oz of evaporated milk and it is perfect. The 12oz. it recommends in the recipe is just too much. You get too much extra filling for a deep dish and it comes out very soft. So if you want a pie that is a bit firmer but still soft try 8oz.

Apple Pie Muffins

Yum!! I can't stop eating them. I used Haralson apples from one of our trees. I got 22 regular sized muffins so I think the serving size is off or the are meant to be 12 jumbo muffins. The odd thing is one pan rose beautifully the other pan was flat. Not sure what happened there. I did add a bit of oats to the streusel. Thanks

Cajun Chicken Pasta

Delicious!! I doubled the recipe. I had to omit the mushrooms(frowns) because I'm the only one that likes them. Also only green pepper because it's cheaper. I aIso added a pinch of red pepper flakes. I didn't really measure the ingredients but it still came out excellent. Will for sure make this one again

Bada Bing Pork Chops

Made these last night and they were O.K. When I made the marinade I thought the taste was alright. I had to marinade them longer than I wanted to, 2 days. My husband said they were ok but all I could taste was sourness. No real distinct flavor, just sour pork. Sorry but I don't think I'll make these again.

Sour Cream Coffee Cake I

This cake is really delicious. I picked this as I am having a bare pantry issue and had all the ingredients. There are only a few very minor issues for me 1) the way the ingredients are listed are kind of "scattered", they aren't listed in order of use if that makes since. I was worried I was going to forget to add something, 2) it's a smaller cake, my bundt came out half full but I was ok w/ that because it didn't use up all my ingredients in the house 3) batter was very thick making it hard to spread in the pan. Otherwise this was very good and will for sure make again.
