Quinoa, Beet, and Arugula Salad

We thought this was a great salad recipe, even with substitutions. Took other people's advice, and used a little less oil. We did mix in half the dressing right when the quinoa was done. Everything else, we mixed with each serving we had so the spinach did not get soggy. This recipe is a keeper! Looking forward to trying it with arugula and goat cheese instead of spinach and feta.

Peach Coffee Cake

I should have read the reviews first. This is good, but a little too sweet for my tastes. The cinnamon idea would also be good. I used 3 fresh peaches, which was just enough to fill the 8x8x2 pan. My husband is gluten-intolerant, so I substituted gluten-free flour and xanthan gum and that part was perfect.
