Fluffy French Toast

I had my doubts about this recipe - flour in french toast?? Well, added a pinch of nutmeg and mace, used brown sugar and it was outstanding! Helpful hint - whisk lightly between coating bread slices, the flour does drift to the bottom of the mixture.

Whiskey Marinade

WOW! I have tried several marinades from this site and others and this one surpassed all of them. I did omit the added salt because of the soy sauce. Wonderful for steaks, turkey cutlets, chicken and pork. You can adjust/add spices/herbs of your choice to suit your taste buds. However I would suggest you try the basic recipe first and then adjust or add favors. A good quality whiskey is the key.

Pleasant Pork Chops

Very good - used chicken, browned and kept warm, sauted onions and garlic, deglazed with broth, reduced and added sour cream. Great over noodles.

Grilled Cornish Game Hens

Very nice. I let the hens marinate overnight, saved the marinate, reduced it, added some hot pepper jelly and used it as a glaze during grilling. Quick, good and easy to fix.

Cajun Crab Soup

Wonderful, quick and easy! The main changes I made just suit my tastes - used creamed white corn and no fat cream cheese instead of heavy cream to cut the fat a bit. Used cornstarch instead of flour (smoother) and all chicken broth. Added some Old Bay for spice. Excellent for dinner, filling and rich. Reheated very well.

Cowboy Caviar

Have made this several times and it's always a winner. I use no fat italian dressing and cut amount to 1/2 cup, tastes fine. Have also used navy and pinto beans, makes no difference - still wonderful!

Rempel Family Meatloaf

Really enjoyed this meatloaf and of course I made some changes. I used venison, didn't have any dry onion soup mix but did have some french onion dip and it was wonderful. Nice and moist, made wonderful sandwiches for lunches. I omitted the cheese cause it's not my favorite thing.

Sourdough Bread I

This is an excellent easy sourdough bread which is wonderful hot out of the oven but even better the next day toasted. Using a potato based starter does take a bit of time - I take my starter out, feed it, wait 8-10 hours, make the bread, let rise 8-10 hours, make loaves and 2nd rise but it's worth it. If your starter is slow, add a bit of yeast to jump start it. But time is what gives this bread such wonderful flavor.

Sourdough Starter I

One of the easiest sourdough starters to get going and keep going. Takes 3-4 batches of bread to really develop deep favor but then there's no stopping it. Makes wonderful bread and rolls which are even better the next day toasted for breakfast.
