Fajita Marinade I

The flavor was fantastic. I cooked the meat in small batches (single layer, uncrowded) and tried to sear it so that it had browned edges. But it was so wet that it just steamed. The only way I could brown it was to overcook it. Yes, I drained it before cooking, and I omitted the water. What should I do differently?

Garlic Prime Rib

I hosted a large dinner party this past weekend and used two 10lb boneless roasts for this. Took maybe 30 minutes longer than mentioned in recipe to cook both in the same oven...and I neglected to make sure I had two roasting pans big enough. I cut off about 3" from each chunk and froze it. Then I kept close surveillance with my instant-read thermometer...took one out at 130degrees, and the 2nd one out at 140ish degrees. Following a 15-20 minute rest, this gave me a medium rare and a well/medium well. There were 25 people and everyone had plenty of what they wanted.

Homemade Crispy Seasoned French Fries

My super picky son finally agreed to try making french fries at home. I made the mistake of trying to bake these instead of frying (like a couple other reviewers suggested). Sadly, they adhered so badly to the pan that they could not be removed from nonstick pan and were rendered inedible. So, strike one with this recipe...maybe I should have greased the pan? HOWEVER, I did use the leftover batter (there's lots) on some sweet potatoes, and fried them. HEAVEN! Next time will try a)frying them, b)oiling the baking pan, and c)with green beans.
