For me, this was just okay. I first made the dough according to the recipe, and it was way too runny. So I added more flour until it was a more workable consistency. Even after adding a lot of flour, it still wouldn't press through a grater. It was just really hard to work with. We ended up adding a ton of flour so we could work it into little pieces that we manually dropped into the water. There was too much pepper (could be my fault), and I couldn't even taste the nutmeg at all. I added a bit of bacon grease with the butter to brown them. They were tasty with sauerbraten and gingersnap gravy and got rave reviews, but I'm not sure how great they'd be alone as a side dish. I'll use this recipe again, but will have to perfect the spice balance and will definitely have to invest in a spaetzle maker.
