Savory Tater Tot Casserole

Definitely brown your ground beef first and add garlic and spices as others recommend. The one change I make is sticking enough tater tots in the microwave to cover a plate, heat up and mash with a fork when done. Mix mashed tater tots into meat + soup mixture. It gives it a bit extra bulk and tater flavor. We still then layer the tots on top as the recipe says. I love this stuff!

Apple Crisp II

I made this tonight and followed the suggestions of others to cut the water in half and add nutmeg. I'm giving the recipe 4 starsbecause with the full 1/2 cup of water, it would have been too runny. Also, it wouldn't have been as good without adding the extra nutmeg (and cardamom). The surprising thing is that I did double the crumb topping, and it was WAY too much. And I used a ton of Honeycrisp apples. Fewer apples, and I would have had to trash it. I cut the sugar in the apple mixture in half, which was perfect. I will make this again, but will go with either the original amount of topping, or 1 and 1/2 times at the most. Very good, but think twice about that topping. Doubling it almost completely overtakes the apples. Oh, and Honeycrisps are perfect for this! :)

German Spaetzle Dumplings

For me, this was just okay. I first made the dough according to the recipe, and it was way too runny. So I added more flour until it was a more workable consistency. Even after adding a lot of flour, it still wouldn't press through a grater. It was just really hard to work with. We ended up adding a ton of flour so we could work it into little pieces that we manually dropped into the water. There was too much pepper (could be my fault), and I couldn't even taste the nutmeg at all. I added a bit of bacon grease with the butter to brown them. They were tasty with sauerbraten and gingersnap gravy and got rave reviews, but I'm not sure how great they'd be alone as a side dish. I'll use this recipe again, but will have to perfect the spice balance and will definitely have to invest in a spaetzle maker.

Paul's Pumpkin Bars

These are a bit "cakey" for me - here is how I modified them to be PERFECT - and people at work obsess over them! I put in only 3 eggs, then instead of 15 oz of pumpkin, I put in a 30 oz can of pumpkin pie mix (I use Libby's). I then add an additional teaspoon of pumpkin pie seasoning to the flour mix, in addition to the cinnamon. I've got my baking time down to 27 minutes in my oven, which is just the point where the toothpick comes out clean for the first time. Then for the frosting, I add 8oz cream cheese, and double the rest of the frosting ingredients. PERFECT!

Garlic Mashed Potatoes Secret Recipe

Absolutely unbelievable! So easy to make and turned out perfect. Instead of chopped garlic, I simply roasted a bulb of garlic in the oven, mashed it and added it right in. That way the garlic was more mellow and not overpowering. I was a bit nervous that the recipe didn't call for milk, but DON'T WORRY... the butter will make up for it! I added a bit too much (16oz - 4 sticks) and they still came out PERFECT! I used fresh grated romano cheese that I bought at the store in a little tub in the cheese section. Even those who don't like skin-on potatoes raved about them! Virtually foolproof and exquisite!
