Strawberry-Brown Butter Banana Muffins

I recently received an email from Betty Crocker that contained this recipe.  I usually have bananas on hand and I like to bake with them after they get too dark to eat.  This recipe is a little different from the normal banana bread recipe. It calls for brown butter.  I have never made brown butter and wanted to give it a try.  Brown butter is made by toasting the milk solids contained in the butter.

I set my burner to medium and melted the butter.  I could see a separation in the butter and I continued stirring.  The butter reached a low boil and suddenly turned a light caramel color.  I quickly removed it from the heat, because I had read that it is also quick to burn.  I poured it through a stainer into my mixing bowl.

Here is the entire recipe,  I have also included it in my recipe box:

cup unsalted butter
1 1/4
  cups sugar

  eggs
1 1/2
  cups mashed very ripe bananas (about 3 medium)
1/2
  cup buttermilk
1
teaspoon vanilla
2 1/2
  cups Gold Medal® all-purpose unbleached flour
1
  teaspoon baking soda
1
  teaspoon salt
1
  cup sliced strawberries

  1. Heat oven to 350°F. Grease or spray bottom only of 9x5-inch loaf pan.
  2. In 1-quart saucepan, heat butter over medium heat, stirring occasionally, until golden brown. Remove from heat; pour through strainer into small bowl to remove blackened bits.
  3. In large bowl, beat butter and sugar with electric mixer on medium speed 2 minutes. Stir in eggs until combined.
  4. Add bananas, buttermilk and vanilla; stir until smooth. Add flour, baking soda and salt; stir until just combined. Fold in strawberries. Pour into pan.
  5. Bake 1 hour 15 minutes or until toothpick inserted in center comes out clean. (Cover loosely with foil if top is browning too quickly.)
  6. Cool in pan 10 minutes. Remove from pan to cooling rack. Cool completely before slicing.
Makes 1 loaf

I decided to make muffins instead of the one loaf. I adjusted the baking time to 22 minutes.  These muffins are very moist and delicious.  They have been husband approved.
