Last Sunday, I decided to make homemade egg noodles to go with our roasted chicken.  I have never made noodles before, so I went to the Allrecipes site and watched the video on making egg noodles with your stand mixer.  The recipe was simple, 2 1/4 cups of flour, 1 Tablespoon of salt, and 3 eggs.  I do not have the pasta attachment for my Kitchenaid Mixer.  Two years ago at Christmas, I received an Imperia Pasta Machine.  Since that time, it has sat, unused, in my cupboard, mainly because I was afraid to try it. 

My 12 year old daughter and I figured out how to connect it to my kitchen counter and insert the rolling handle.  We had very few problems, except for the time I dropped the handle on her toes.  We rolled the dough and and laid it out and cut our noodles by hand.  I really was a two person job.  I rolled and she caught the dough as it came out of the machine.  My pasta machine does have a cutter attachment, but I will save that for the next time.  We probably could have rolled them a little bit thinner, because my end product was a little thick.  All in all, I was impressed with our efforts.  My husband was also.  He wanted to know where I bought the dough since I have never made my own pasta.

My fondest memory as a young child was watching my mother make noodles for chix soup and swiping the raw noodles off the cutting board and eating them! Good for you on trying something new, fun and scary.

I like to make home made noodles when I make chicken soup. The do plump up when you cook them. I slowly go up from setting "1" to "5" on my pasta machine that tends to be perfect for me,

I think I only went to three. That's probably why they were a little thick. Thanks for the advise.

Thanks for the inspiration, Happyfood. I haven't made pasta in a few months. I used the last of my frozen pasta to make lasagna for my husband while I was at Mauigirl's Las Vegas AR Round Up. Makes a real difference when using fresh ingredients.
