Big Al's Chicken

I am really, really surprised by the high ratings for this marinade. I used the ingredients list faithfully (which I don't always do - I did use an egg instead of the egg substitute however) and found the resulting dish extraordinarily greasy. Yikes! I am not someone who normally minds grease, but this was outrageously greasy because of all of that oil. Otherwise, the flavor was fine - a little bland, but fine. I am going to try this again, but this time only using a 1/4 cup of oil. Hopefully it'll be better. I found this recipe, btw, because I am on the low-carb diet, and I do have to say that at least it is low-carb, which is a bonus. Many marinades are stuffed with sugar and honey, and this marinade does not have that, which I appreciated. Hence me being willing to try this again. :)

Mediterranean Kale

Absolutely wonderful! I've never had kale before, but now that I know how to cook it, I'll have it regularly. Everyone loved it.

Broccoli With Lemon Almond Butter

I followed the others' suggestions and halved the lemon juice and left out the lemon zest (which wasn't hard to do, considering I had no lemon zest and would have had to buy a lemon just for this purpose). This was WONDERFUL. Marvelous. Stupendous. A delight to the senses. Fantastic in every way. Will be making again and again, you can be sure. :-)

Sauteed Swiss Chard with Parmesan Cheese

I have to say - I would have given it three stars, but my fiance really seemed to like it, so I'm averaging our opinions here. :-) The lemon juice with the chard just seemed jarring to my taste buds. I've not cooked chard before (I've always ate it raw in salads) but it seems like it would pair better with bacon. I'll try that combo next time. But like I said, my fiance LOVED this version, so perhaps you will too.
