Downeast Maine Pumpkin Bread

Very easy to make and delicious. I, too, like more of a 'spiced pumpkin loaf', so I doubled the spices. Instead of flouring the pan, I used cinnamon sugar. Walnut streusel on top. Especially good next day w/butter!

Spag Bol

Thought I'd try a new bolognese sauce and this just doesn't compare to my recipe. I give it 3* for ease, but to add a *wow* flavor, try this. After saute veggies, mix in veal/beef/pork (1/2 pound each). Add wine & stir until almost evaporated. You need the wine because red wine releases the last bit of sweetness in the tomato. Then add 1/2C whole milk & stir until evaporated. Next, tomato, etc. and simmer away. If you have a parmesan rind, toss this in when simmering. Always better the next day, but also great in lasagna.

Grilled-Salmon Lemon Basil Cream

Picked up fresh basil from Farmer's Market and decided to make this sauce. I saved some grated lemon rind and made the sauce with fat free half & half. I was amazed at how thick the sauce was. Inspired by it's luscious creaminess, I cooked & added basil pasta that I picked up on my last trip to Italy. Served this as a side dish with chiffon basil and lemon zest on top, then grilled, sliced, and fanned a rib-eye steak. I give it 5 stars because the sauce was incredible with fat free half&half. Next, I'm going to poach & chill salmon, flake it on top a crostini and rather than basil, add dill to the sauce. Can't wait!!

Beth's Chocolate Chip Cookies

Thumbs up! I didn't have shortening and used butter...turned out fabulous. If you like thick fluffy cookies, just round out 1T cookie dough, bake 12 min. If you prefer your cookie a little flatter with crisp edges and soft center, round and flatten the 1t cookie dough in your hand first, bake 10 min. Keep the 1T vanilla! I used Ghirardelli chips and were they ever gooey! Yum.

Coconut Oatmeal Cookies II

This is a fabulous base recipe that allows you to add your own personal touch. Reduced white sugar a little, used only 1/2C premium white chips, and added 2/3C chopped cranberries. Perfect for holidays. Crisp outside, chewy inside. Watch the cookies in the oven. An extra minute can brown the cookie too much.
