Simple Scones
Delicious!! If you're like me and have had limited success with scones, try this excellent recipe. Grating the frozen butter is a stroke of genius and I'm going to try the same technique in other pastry. By the way, I didn't use a food processor and the dough came together very well.

Blueberry Pound Cake
I've made this cake a number of times and it never disappoints. It is rich and buttery with a yummy kick of fruit. The sugar sprinkled on initially lends a lovely crunchyness. I use mixed berries because I always have them on hand in the freezer and I reduce the 2 cups of white sugar to 1 3/4. As other reviewers have noted, the batter's really thick and will stick to your spreader, so after I've got it in the pan I wet my fingers and spread it around evenly. I find that it needs at least 75 minutes to cook through because it's quite dense. Finally, it freezes very well if you have any leftovers after a few days (which is unlikely!).

Spinach Quiche
This has been a hit with family and guests at two luncheons. I use 3 green onions (not a bunch) so that the flavor doesn't overpower. I took the advice of another reviewer to mix up the cheese: instead of cottage cheese I use 16 oz of low fat ricotta; for the 2 cups of additional cheese I use smoked gouda, strong cheddar and mozzarella. The gouda not only adds a yummy complexity, it creates a hunger-inducing scent in the kitchen! Finally, instead of croutons, try panko -- very crunchy and you won't miss the crust at all.
