Black Bean Salad
I don't like pimenntos so I left them out. Also, this will freeze well if you leave out the avocados, that way I can make a big batch and freeze it (lots of chopping involved). I didn't seed or peel my tomatos so I only had to use 1/2 cup of salad dressing. It's great! Make some and freeze it for later!

Tiny Chicken Turnovers
I liked the idea of these turnovers but I can't make pastry to save my life, so I used Pilsbury cresent roll dough and they turned out great! Next time I'm going to add chopped carrots and celery since they already tasted like mini pot pies. I tried freezing some and they only take 1 minute in the microwave! My kids won't eat anything but they at least tasted these. ;-P

Fruity Grilled Pork Tenderloin
I have two kids ages 3 and 5 and they are very picky eaters.. they loved this recipe! I made pork steaks and used orange soda with peach/pinnapple jam! I only marinated for about two hours but I know the kids will like it even better when I marinated it longer next time!
