Beth's Spicy Oatmeal Raisin Cookies

Terrific recipe! I tweaked it a bit. I used all butter, no shortening, cut the white sugar to 1/4 cup and for spices, I used 1.5 tsp of pumpkin pie spice. I boiled the raisins for a few minutes to plump them up and they really did stay juicy! I also added chopped walnuts, toasted almonds and dried cranberries. They were soooo good! I would highly recommend trying other mix-ins!

Spinach Stuffed Chicken Breast

So delish! I made these for a dinner party and got raves. It was super easy! I also used mozarella instead of pepper jack, but I would imagine it would be just as good with a kick! There was a good amount of liquid extruded during cooking. Also, I may try turning the chicken breast halfway through cooking next time, so that the bacon can crisp on both sides.

Delilah's Frosted Cut-Out Sugar Cookies

I followed the recipe to a T, even got butter flavored Crisco for the first time in my life. However, the dough was just too soft. Even after refrigerating it overnight, it wouldn't stay stiff enough to make any decent cut-outs. And they are not crispy on the outside. They are more cakey that I like. Still looking for a good sugar cookie recipe...

Cajun Chicken Pasta

Great recipe! I made a few alterations - marinated the chicken for four hours, used 4 cups of cream for 16 servings (recalculated recipe asked for 12!!), used 1 tbs corn starch to thicken the sauce a bit. Though I reduced the amount of cream, there was plenty of sauce because of the liquid exuded from the veggies. Served with salad and some crusty french bread and it was a huge hit. Be generous with the cajun seasonings on the chicken because it ends up flavoring everything else too!

Artichoke & Spinach Dip Restaurant Style

Have served this at a couple of parties already and it was a huge hit both times! I used a little extra alfredo sauce and reduced the cream cheese to make it more easy to dip.

Chicken Marsala

A great chicken marsala recipe, super easy too! I made this dish over pasta in less than 30 minutes. I cut the chicken breasts into medallions to speed up cooking, and doubled the mushrooms, marsala and sherry - since we like a saucy pasta. I think it added more marsala flavor too. When the chicken was completely cooked through, I added a couple of tablespoons of heavy cream to make the sauce creamy. It turned out perfect, just like we've had at restaurants! A definite keeper!

Chocolate Crinkle Cookies

I lost my tried and true chocolate crinkle recipe, so I tried this one. It was not as good as the other one I had. The cookies were too dry and did not 'crinkle' very well. I still gave it 3 stars because the flavor was pretty good.
