Oven Fries

Reviewed: Apr. 26, 2012
These were great! I made them on the grill since it was hot out and they were very tasty and not sugary at all. Perfect with the hamburgers we grilled out. Next time I'll use more pepper to season them a bit more.

Applesauce

Reviewed: Mar. 3, 2012
This recipe was excellent and so very yummy! I used 6 fuji apples, 1/8 teaspoon each of cinnamon and cloves, 3/4 cup water. I let that that simmer for about 15 minutes before putting just 2 spoonfuls of sugar in and let it simmer for 10 more minutes. Then I transferred it to my food processer and pulsed it a dozen times or so. It was fantastic warm. I will try it tomorrow cold. I can't wait! Thank you for the excellent recipe. I will never buy applesauce again!

English Muffins

Reviewed: Mar. 17, 2012
My first try on these worked okay, but not super. My husband liked them a lot and gives them a 5 star rating. They didn't really have nooks and crannies, but the taste was great. I think I rolled them out too much. I'll try barely rolling them next time.

Paula's Bread Sticks

Reviewed: Mar. 20, 2013
We loved this - omitted the sesame seeds and brushed butter on top just out of the oven and sprinkled with fairy dust (4 parts dry Parmesan cheese, 3 parts garlic powder, 2 parts onion powder, 1 part oregano). Tasted just like the Olive Garden bread sticks. A definite keeper. Thank you!

Lower Fat Banana Bread II

Reviewed: Jun. 24, 2012
This was a very good recipe. I think the thing that helped it out the most was the second step where you beat the eggs and sugar until fluffy. That seemed to give this very dense and moist loaf a raise. Thank you for the heathly snack!

Almost No Fat Banana Bread

Reviewed: Jul. 4, 2012
Great recipe! I cut the sugar like others had suggested by 1/2 and it was plenty. I also used 1/2 cup of wheat flour and 1 cup of bread flour instead of the 1 1/2 cups of all-purpose flour. Thanks for the posting!

Sour Cream Cucumber Salad

Reviewed: Jul. 29, 2012
This is a very good salad. I added a little bit of chopped fresh mint leaves and garlic and really liked those additions. I also tried this with a bit of sugar, but didn't like that as well. Thank you for an awesome recipe!

Baked Vegetables I

Reviewed: Jan. 29, 2012
This was a very flavorful and excellent way to enjoy a variety of vegatables. I substituted 1 yellow squash for the zucchini because that's what I had on hand, used frozen broccoli florets instead of fresh, added about 1/4 yellow onion cut into thick wedges, substitued herb and garlic dry soup mix for the onion soup mix. I used just shy of a 1/4 cup of olive oil, but I will only use about 1/8 cup next time because that would be plenty. Thanks for the super recipe!

Creamed Cucumbers

Reviewed: Aug. 6, 2012
This was fantastic! I didn't add any salt or hot sauce. I used garlic powder and onion powder instead of garlic salt and onion salt. Also, I seeded the cucumbers before slicing them and I think that really helped the dressing to not be too runny. Thank you Diane and Mom-in-Law for a superb recipe!

Salsa for canning

Reviewed: Aug. 28, 2012
This was excellent. I made a half batch and canned it. I used lime juice instead of lemon. I didn't use any cayenne pepper or cumin because I didn't have those on hand, but I did use just a dash of smoked paprika. I used 2 garlic cloves instead of powered garlic. I used only white onion because that's all I had on hand. I used about twice the amount of fresh cilantro it called for and thought it could use a bit more of that even. I didn't put any jalapenos seed or membranes in it so that it wouldn't be too hot. I gave them 25 minutes in a hot water bath to can them. It was just perfect. Thanks for the recipe!

Make Ahead Manicotti

Reviewed: Sep. 7, 2012
I absolutely loved this recipe! How easy to make ahead and throw in the oven later for an easy dinner. I don't think I'll use the sugar next time, but other than that, it was very good. Thanks for the awesome recipe!

Cranberry Nut Bread II

Reviewed: Jan. 12, 2013
This was totally awesome! I used 1 cup of whole wheat flour in place of 1 of the 2 cups of AP flour. I also used 1/2 cup zero calorie sweetner in place of 1/2 of the 1 cup white sugar. Instead of a loaf pan, placed the batter in mini muffin pans and made 48 mini muffins. After baking about 30 minutes, I placed cling wrap over them while they cooled. Thank you for the wonderful recipe!

Crusty French Bread

Reviewed: Mar. 3, 2013
This bread is really easy to put together and my family really loved it. I substituted 1 cup of whole wheat flour for 1 cup of the flour and used 2 cups of bread flour for the remainder of the flour. It has a very nice appearance and is soft on the inside with a nice outer crust that it's too hard. Thank you for the recipe!

Susan's Creamed Cucumbers

Update to review: I ran out of evaporated milk in a can and used this substitute that worked great: 1/6 cup of dry nonfat milk mixed with a shy 1/4 cup water. Original review: This was fantastic! Also, I seeded the cucumbers before slicing them and I think that really helped the dressing to not be too runny. Thank you Diane and Mom-in-Law for a superb recipe!

Muesli

Reviewed: Jun. 27, 2012
Once I finally figured out how to serve this, I absolutely love it. Initially, I was eating it like cold cereal as one of the pictures shows. That left a little to be desired. I didn't like the oatmeal in it that way. I read on a website that you're supposed to eat museli after it's been soaked in cloudy apple juice overnight. I wasn't that brave, so instead I soaked it in skim milk overnight and the results are marvelous! The oats puff up big and chewy. I didn't use any sugar, but substituted 1/4 cup of toasted coconut for the sugar. I love it this way - not too sweet. I used about 1/2 cup of golden raisins and 1/2 cups of sweetened craisins. I have already made a second batch and am really looking forward to this as my breakfast staple. Thank you so much for posting this Jen.
