Peanut Butter Chip Chocolate Cookies

These are great cookies! The bag of peanut butter chips I bought was just about 1-2/3 cups, so I cut down the recipe slightly and it still made 4 dozen nice-sized cookies. I'm guessing the recipe as written could make nearly 5 dozen. I made these with my 11-year-old son that is learning to cook and he thought they were amazing. Thank you!

Chicken Puffs

Baked Vegetables I

This was a very flavorful and excellent way to enjoy a variety of vegatables. I substituted 1 yellow squash for the zucchini because that's what I had on hand, used frozen broccoli florets instead of fresh, added about 1/4 yellow onion cut into thick wedges, substitued herb and garlic dry soup mix for the onion soup mix. I used just shy of a 1/4 cup of olive oil, but I will only use about 1/8 cup next time because that would be plenty. Thanks for the super recipe!

Steakhouse Wheat Bread for the Bread Machine

My son that loves bread said this was really good. I think there was a tad bit too much cocoa, but it was very moist and delicious. I'll try this as a base for my pumpkin french toast and see how that turns out. Thanks!

Applesauce

This recipe was excellent and so very yummy! I used 6 fuji apples, 1/8 teaspoon each of cinnamon and cloves, 3/4 cup water. I let that that simmer for about 15 minutes before putting just 2 spoonfuls of sugar in and let it simmer for 10 more minutes. Then I transferred it to my food processer and pulsed it a dozen times or so. It was fantastic warm. I will try it tomorrow cold. I can't wait! Thank you for the excellent recipe. I will never buy applesauce again!

Basic Cheese Polenta

This wasn't my favorite. We tried it both fried and baked. The baked was better in our opinion. The flavor reminds my son of cheesy tator tots. I can't say we'll make this again.

Whole Wheat Sweet Potato Muffins

These muffins are great! I substituted applesauce for oil and only used 1 of the 2 egg yolks and they turned out perfect. I made them into mini muffins so I can have a few and not a lot of guilt. **Revised rating to 4 stars from 5 because I think there's too much honey in the muffins. They are very sticky to eat and don't keep well. First time around though, they are great.

English Muffins

My first try on these worked okay, but not super. My husband liked them a lot and gives them a 5 star rating. They didn't really have nooks and crannies, but the taste was great. I think I rolled them out too much. I'll try barely rolling them next time.

Oven Fries

These were great! I made them on the grill since it was hot out and they were very tasty and not sugary at all. Perfect with the hamburgers we grilled out. Next time I'll use more pepper to season them a bit more.

Nacho Cheese Sauce

Quick and Easy Pizza Crust

I think the recipe itself is great - especially if you use it in an oven. I tried to use this for the grill and had a hard time getting the very sticky dough transferred from my cookie sheet to the grill in a nice shape. This recipe didn't lend itself well to moving from the cookie sheet.

Roasted Garlic Cauliflower

This recipe was very nice. I'm not a huge cauliflower fan, but it was very tasty. I followed advice of others and combined the cauliflower, olive oil, and garlic in a bowl instead of a bag. It was easy to scrape out of the bowl into the casserole dish. I didn't have any fresh parsley, so used dry and put it on prior to roasting. I thought it came out a bit salty. Next time I won't add any salt. My family liked it okay, but not really a homerun. I will try it a few more times. Thanks!

Garlic and Herb Pull Apart Bread

I made this with a basic white bread from scratch instead of the biscuit dough and about 2 tablespoons of olive oil instead of butter to help cut down on the fat content. It was good, but next time I'll use butter instead of olive oil. It was a little dry with that little olive oil. The family liked it fine. Thank you for a nice change of pace for garlic bread!

Lower Fat Banana Bread II

This was a very good recipe. I think the thing that helped it out the most was the second step where you beat the eggs and sugar until fluffy. That seemed to give this very dense and moist loaf a raise. Thank you for the heathly snack!
