Quick and Easy Green Chile Chicken Enchilada Casserole

We LOVE this, having a second serving tonight. My husband didn't even add hot sauce, taco sauce, nothing, and really ate it up and looking forward to it again tonite. I did use many of the "tips" from others, coating the torn up tacos, added green onions, mixed chicken with the sour cream---perfect meal.

BBQ Pork for Sandwiches

Really easy, really good. I don't do the oven step tho, drain off the liquid and put the pork (I use country style pork ribs) back in the crockpot with the Sweet Baby Ray's and set it on warm until it's time to eat. Would be great for feeding a big group, or cut it down for just 2 of us, with leftovers, of course:)

Authentic German Potato Salad

I have made this several times and it's just the tastiest potato salad ever--German or otherwise! Best made ahead of time, and served at room temperature---or a day ahead, and taken out of the refrig a few hours before serving. We LOVE it!

Antipasto Pasta Salad

Excellent recipe---I halved it, used salami and ham, and fresh mozzerela cheese instead of asiago--couldn't find that. We ate it for dinner and a couple of lunches, and it stayed yummy or yummier as time went by:)

Steak Salad

The dressing rocks!!! Oh so tasty, would be great on ANY salad I think. The salad itself is good too, esp liked the olive addition, adds zip. Almost followed the ingredients, but added fresh mushrooms rather than green pepper, just our preferance. Many thanks Linda.

Cucumber-Carrot Salad

Pasta Pomodoro

Chunky Tomato Potato Soup

VERY goood!!!! 2 things I added, a couple of chicken boullion cubes, and way more "simmer" time, about 2 hours. I think ALL soups benefit from a long, low cooking time. I will definitely be making this many more times, thanks for sharing.

Creamed Cooked Cabbage

This is WONDERFUL! I only had half and half, so added some shredded Cheddar cheese to the dish to thicken it a bit more, Panko crumbs on top, and the only mistake I made was in cutting the recipe to 4 servings for just the 2 of us--could have eaten more, lesson learned:)

My Mom's Swiss Steak

Wonderful oldfashioned Swiss Steak!! Gave it 4 stars because I did add a can of beef broth, browned the floured steak in EVO,in my Dutch oven, then added everything else and baked at 275 for about 3 hours--perfect!!! Did not have to thicken further. Served over mashed potatoes, and then made the whole thing into a Shepherd's Pie for another meal.

Easy Grape Salad

I made this for Valentine Day dinner---for DESSERT:) It went over very well with guests. I used marshmellow cream and sour cream, seemed to work great, and was easier to "blend". Almonds great in it too. Of course, we had to have a chocolate heart on the side:)

Erin's Cheesy Broccoli Soup

Delish dish! I added a bit of chopped carrot and celery and half the cream cheese, otherwise followed the recipe. We like our soup "chunky", so I used a potato masher on the broccoli mixture and it worked perfectly. Love it, and bet it will be even tastier by suppertime. Thanks for sharing.

Chicken and Gnocchi Soup

Delicious!!! I pretty much stuck to the recipe, but did add peppercorns and 1 chicken boullion cube, also, I made it early in the day so the flavors had time to meld. We loved it, and still do, as it's great the next day or 2 as well:):)

Sausage and Egg Casserole

Wonderful basic recipe, I increased it to serve 12, added green onion, green and red peppers chopped, and some chopped tomato for color and extra taste---got all rave remarks. Would be good with any meat or veggie additions. It baked in the time alloted, and I added 15 minutes "rest time" before slicing into servings. LOOKED as good as it tasted, another star:)

Balsamic Bruschetta

This was really great---I did an "appetizer" dinner on a warm nite--deviled eggs, bacon wrapped olives, Watermelon Salad, and these on toasted bread rounds--it was super good! I made all the things early in the morning to let flavors blend--took a bit of time, but when dinner rolled around, toast the bread and you're good to go. Will definitely do the Bruschetta many more times, thanks for sharing.

Refreshing Watermelon Salad

This was the hit of our 4th of July party yesterday--everyone asked for the recipe! I followed the recipe, except for mixing half lime and half lemon juice which worked fine. A keeper for sure.

Sauteed Zucchini

Very good recipe, I'm not a zucchini fan too much, but this makes it as good as it gets:) The only addition I made was a sprinkle of parmeson cheese at the end.

Kielbasa Appetizer

Thank you Mary Jo for a wonderful, easy recipe. I did cook on low for 6 hours or so, and tilted the lid so the sauce cooked down some and the kielbasa slices even browned a bit. Guests loved them!! I am a Mary Jo also, by the way! Don't come across too many of us:)
