Extreme Chocolate Cake
Wow! That's my initial reaction. For years, I have searched for a chocolate cake recipe that tastes like chocolate - not just flavoring. This is is! Even my husband said the icing is like eating a candy bar. I read all of the reviews and ultimately ended up making the recipe exactly as RACH56 posted it - it was a knock-out. The only thing I did differently was to add a parchment paper liner to the bottom of the cake pans and it came out perfect. I don't know what other people are doing, but this cake deserves 10 stars - it is truly outstanding. Oh, I did use the coffee in lieu of water, but nothing else. Thanks again! This is my new "favorite" cake and "favorite dessert".

Raspberry Fudge Brownies
Wow! This is definitely the most delicious brownie I have EVER tasted! After reading all of the posts, I did not use the tin foil liner. I simply buttered and floured the pan and the brownies slipped right out. I did follow other hints, i.e., chilled the cream cheese mixture and chilled the chocolate mixture before using. I didn't have cool whip or other premade, so I used 1/2 cup of whipping cream with 1 tbl of sugar and whipped it up before using. It worked fine. I agree with others that undercooking the brownies is by far preferable to overcooking - they are delightfully chewy. I made these for Valentine's Day yesterday and my hubby was ecstatic. We could have eaten every single one, but I didn't want either of us to be sick (too much sugar). But oh brother, did I want to eat all of them! True they are a little more work than your average brownie...but there is nothing average about these babies. They will knock your socks (and everything else) off! Larkspur, you have my and my husband's undying gratitude for a drop dead, dynamite dessert. Thank you!!!!! I only wish I could give you at least 10 stars.

Creamy Cheesecake
Without question, this is the easiest and best cheesecake recipe I have found to date. It is so creamy and so super easy. I did follow the tip to beat it with a stand mixer for 12 to 15 minutes and I did use a water bath. Absolutely fabulous! One little aside - I made an extra cake in a square pan. After cooling, I cut the cake into little squares, plopped them in cupcake papers and froze them in a plastic container. Now, I can take out one or more squares at any time and enjoy delicious cheesecake with no mess. Thanks so much Karin for this great recipe.
