Grilled Salmon I

Reviewed: Aug. 1, 2012
I loved this! I followed another reviewers suggestion and cooked it in foil packets in the oven. So there was absoultely no clean up! Now THAT is the way I like to cook. The taste is just delicious. Next time I would save more of the marinade to pour over the salmon. I servied it over quinoa. Yum!

Banana Banana Bread

Reviewed: May 15, 2012
This bread is so moist it almost seemed like it wasn't done baking. I probably ended up baking it for about 75-80 minutes. Also, it was overflowing in the bread pan which may have been a factor as to why it needed a little more time. Everyone loved the bread and I will definately make this again. Maybe next time I will try just a smidgeon less bananas (I let 6 large bananas ripen and it turned out to be a tiny bit more, maybe 1/4 cup, than the amount of smashed bananas called for)

Delicious Black Bean Burritos

These were delicious! I added 1/2 a serrano pepper and it was smokin'! but still delicious. This was really easy to make and it made 4 good size burritos for us.

Jennifer's Granola

Reviewed: Apr. 26, 2012
Deliceous! The only thing I omitted was the wheat germ since I didn't have any. I think next time I will try leaving it in for 5 minutes longer to see if I can't get it a little crunchier although it is addicting just as is. Thanks for a great recipe! I am already excited to make this and give it away for Christmas presants.

Turkey and Quinoa Meatloaf

Reviewed: Apr. 16, 2012
This was delicious! Even my picky husband liked it (a HUGE plus). I will be making this again, and most likely will double the recipe so I can freeze a loaf, as I know we will be having this more often.

Oatmeal Soup

Reviewed: Apr. 16, 2012
I give this recipe 3 stars as it is written. The first time I made it it was really yummy but a little too salty for my taste, and also not quite as filling as I had hoped. The second time I made it I used almond milk instead of regular milk, I did not add any salt, I added 2-1/2 cups of chopped celery. I cooked as instructed, then let it cool overnight in the refrigerator (this takes it from soupy-runny to THICK). Then in the morning, I added 1 cup of frozen berries and heated it up for about 2 minutes in the microwave. One serving was 277 calories and I was stuffed! thanks for the great base recipie idea. I think I now have a new breakfast staple.

Awesome and Easy Creamy Corn Casserole

Reviewed: Apr. 9, 2012
I thought this dish was great but I don't think it needed any butter. I had to take it out with 10 minutes left to go and drain the buttery grease that it was simmering in just so it could finish baking. It was sooooo greasy. (probably not the best for our arteries). It may have been because I used the marie calander corn bread mix from costco. That mix seems a little moise to begin with.......

The World's Greatest Crab Recipe

Reviewed: Apr. 9, 2012
I feel like I MUST have done something wrong. I cut the crab in half, boiled it, applied the buttery batter, but it didn't seem like much of the butter flavor was absorbed in the crab. Not sure what I did wrong as I followed the rest of the recipe to the letter. It smelled like it was going to be more flavorful.

Mexican Bean Salad

Reviewed: Apr. 9, 2012
This was so tasty! My husband's only critical comment was that it was a little oniony tasting and he was worried what it did to his breath! So we reserve it for dinner time only :-)

wow. This dish is so dangerous for me! I made it as stated and then rolled the balls in crushed heath bar bits. It was amazing! I ate WAY too many because I just couldn't help myself.

Herbed Cottage Cheese

Reviewed: Apr. 9, 2012
Delish! This is soo yummy and low calorie. To bump up the volume even more, I added chopped red bell pepper, chopped cucumber, and chopped celery. I have 1 serving this morning and I was stuffed for 2-3 hours! (pretty good considering it was around 200 calories)

These were good, but not as much flavor as I expected. Maybe I will up the spices next time, or use more flavorful cheese.

Slow Cooker Chicken Curry with Quinoa

Reviewed: Feb. 3, 2012
This turned out pretty good. I increased the curry seasoning to 3tbsp (the only change I made) and it was still a pretty mild flavor, although good. It was not as hearty as I thought it would be. Maybe I didn't use enough chicken, but I would serve it with whole wheat bread or something else on the side next time.
