Vegan Chocolate Cake

This recipe is called crazy cake. It's been around since the depression. You can also omit the cocoa add orange zest and replace the water with orange juice to make an orange flavored cake.

Jacky's Fruit and Yogurt Muffins

I have made these several times because they are so easy and versatile, not to mention my kids love them! This morning I used black cherry Greek yogurt, a large mashed banana, subbed brown sugar for the white, added an extra teaspoon of vanilla, and a half a cup of semi sweet chocolate chips. My oldest said this was the best combo yet. Have fun with this recipe, the possibilities are endless!

Orange Chicken Stir Fry

With a few tweaks this recipe is fantastic! After reading a few reviews and following my own taste I decided to omit the salt as suggested and am happy I did. I also added 1/2 tsp of groung ginger and 1/8 of a tsp of red pepper flakes, and coated the pieces of chicken with corn starch before frying. This recipe is easily tailored to your specific taste, which always makes a great recipe. I used my own combo of veggies too, broccoli, a julienne of carrots and cabbage, snow peas, and yellow bell pepper all served over a bed of brown rice. My husband said it was better than take out! **** note: I did not need to add flour since I coated the chicken pieces in corn starch before cooking them. If I wanted it to be thicker I would have used more corn starch, not flour.

Iced Pumpkin Cookies

These cookies are great as is, but... I tweak them a bit for my tastes. I use brown sugar instead of white (I actually just used organic coconut palm sugar) and 2 tsp of pumpkin pie spice instead of individual spices. For the frosting I throw in about 1/8 c of white chocolate chips in with the melting butter then add 1/2 & 1/2 instead of milk. Whisk quickly until smooth then off the heat add vanilla, then add to powdered sugar. I sometimes will add a pinch of pumpkin pie spice o the frosting as well. Love these cookies!

Sean's Falafel and Cucumber Sauce

I made these for my picky eaters last night,(my husband, 9 year old & 3 year old) to my surprise they all loved them. I used two cans of chic peas, 2 eggs and 1 cup of whole wheat dry bread crumbs and had no problems with consistency. I fried them in canola oil and they stayed together beautifully. I drained them on paper towels then held them in a 300 degree oven on a wire rack over a cookie sheet and they were not oily at all. I did take the advice of another reviewer and used baking soda instead, I too noticed the use of soda not powder in several other recipes. For the sauce I added minced garlic, a little lemon juice and a teaspoon of olive oil mayo. It had great flavor and just the thickness I was looking for.

These are VERY good. I do think the bigger they are the better. I used an ice cream scoop to make mine and baked them for 15-16 minutes. Thanks for the recipe!!

Lemon Cake with Lemon Filling and Lemon Butter Frosting

I made this cake for my husband's birthday. He chose the recipe, and I must admit I did not read the entire recipe before I started the cake so my only complaint would be the amount of time it takes to make and assemble. If you plan to make this you should make it the day before not only because of the time it takes to make but it really does get better the longer it sits. My husband and I were thrilled the kids did not like this cake because that meant more for us!! We ended up eating it over the next four days and liked it better each day we had it. Thank you for this great recipe! I did not feel it needed any adjustments, it was perfect as written.

Fluffy Peanut Butter Frosting

Great tasting and EASY! I made cupcakes so I halved the recipe. I was a bit short on peanut butter so I added 2 tbsp of marshmallow cream to make up the volume along with 1/4 tsp vanilla (I LOVE vanilla.) This recipe does not need any changes, mine were out of necessity and just happened to work out.

A-Number-1 Banana Cake

Awesome recipe! I was searching for a banana cake recipe that would taste just like Entenmanns Banana Crunch cake and this was it!! I added a brown sugar, flour & butter crumb topping ( for the crunch) then melted semi-sweet chocolate chips and drizzled it over the top and tada there it was! I think it is even better, thanks for a terrific recipe. I did add 1 tsp of vanilla as suggested by another reviewer because I too feel everything is better with vanilla!

Pumpkin Pancakes

I used this recipe to get an idea on how much pumpkin and spices to add to my regular pancake recipe and with a few adjustments it really turned out great. I used 1 3/4 c. flour, 1/8 c. brn sgr, 1/8 c. wht sgr, 2 tsp baking powder, 1/4 tsp salt, 2 eggs, 1 tsp vanilla, 1/4 tsp ginger, 1/4 tsp cloves, 2 tsp cinnamon, 1 1/2 c. milk, 1 c. pumpkin & 4 tbs melted butter. Thanks for helping me tweak my basic pancake recipe!

Chocolate Mousse Cake IV

Outstanding!! My 9 year old son asked for a chocolate mousse cake for his birthday and I will admit I was a bit worried it would be too complicated and not come out well, then I found this recipe. Soooo easy! I used a devils food cake mix and followed the recipe exactly. Do make sure you whip your cream until stiff peaks are formed and this cake is best served after setting up in the refrigerator at least 8 hours or overnight. I also divided the cake layers in two so I would have a four layer cake. I think this helps with keeping the cake from sliding because the cake layers are lighter weight which helps keep the mousse from oozing out the sides of the cake. It also makes for a great looking slice of cake! My son LOVED this cake and so did my husband! I will definitely be making this cake again, thanks!!

Carrot Cake III

Great recipe!!! I did make a few minor changes after reading many reviews. Instead of 2 cups of white sugar I used 1 each of brown and white, added and extra tsp of each vanilla and cinnamon. It was moist and delicious and really doesn't even need frosting although the frosting is great minus that 1 cup of powdered sugar as others have suggested. I have made this recipe twice in less than a month and it never lasts more than two days. Everyone loves it!

Marinated Baked Pork Chops

After reading several reviews I decided to take some suggestions. I made this using 4 bone in chops, so to make sure I had enough sauce to put on the rice I tripled the recipe with the following changes: 1) 2 tbs olive oil 2) 3 tsp white vinegar instead of lemon juice 3) 3 tbs orange juice (could have added 1/4 c) 4) 3 cloves garlic chopped (would add more next time, my family loves garlic) 5) 1-2 tsp red pepper flakes I mixed the ingredients in a corningware dish and let it marinate for a few hours then cooked it at 350 for 15 minutes (covered) then flipped chops and cooked for and additional 10 minutes uncovered. I then broiled for for 3-5 minutes for a little char flavor. There was plenty of sauce for the rice and I could have actually added two more chops and had enough sauce. This recipe was a great base to jazz up several different ways. Thanks for all the inspiration!

Pizza Dough I

This was a quick and easy recipe. I did let the dough rise for about 30 minutes and used olive oil. I will double the recipe next time to make garlic knots, a calzone or stromboli. Thanks for a great recipe!

Creamy Rice Pudding

YUMMY!!!! This was delicious and simple to make! I was short on milk so I substituted 1 cup of milk with half and half, which only added to the creamy goodness. I omitted the raisins (not a fan) and added 1/4 tsp of cinnamon, heaven! If you like rice pudding make this recipe.

Rich Chocolate Frosting

This was a really good EASY recipe. I too cut it in half and reduced the sugar to 4 cups for two nine inch rounds. I was out of vanilla so I used 3 tbsp brewed coffee instead, this gave it a mocha flavor which was very good. Next time I will make this and use the vanilla as called for. Thanks for a great recipe:)

Old-Fashioned Chocolate Fudge

WOW! I made this yesterday with my seven year old son and I must admit I was convinced it wouldn't come out right. I am happy to say I was wrong! It came out great. I read through many helpful reviews before I started, and I think that is why it worked. Be sure NOT to stir or move after it comes to a boil and while it is cooling, very important. I added 2 tsps of cold coffee along with the butter and vanilla (because coffee enhances the flavor of chocolate) and the taste was awesome. Thanks for a great recipe!

Sugar Cookie Icing

I used this with my seven year old son and had great success with this recipe. I did take the advice of another reviewer and used 4 tsps of milk and 1 tbs of corn syrup and the consistency was perfect. I must admit I did not have corn syrup so I looked up a recipe online and tried to make it, but failed, so I resorted to using maple syrup (the imitation kind) because I knew it was made up of mostly corn syrup. The slight maple flavor combined with vanilla (I did not use the almond extract) tasted great. I agree with the other reviewers this dries nicely and has a great shine making it look just like a cookie you would buy in a bakery, thanks for the great tips.

Ten Minute Enchilada Sauce

I too used this sauce to make enchiladas with leftover turkey meat and they came out great. I also used regular all purpose flour. This recipe was very easy and came out great, I don't think I will buy another can of premade, thanks.
