I've learned to cook pretty much thanks to my mom's recipes and Since living with my boyfriend, I have become a better cook through trial and error.
My favorite things to cook
I enjoy cooking low fat recipes as an alternative to higher calorie/fat recipes. I pride myself on making great meals that don't taste low fat. Also, since my boyfriend was diagnosed in 2005 with Celiac Disease (the body is unable to process gluten), I have become an avid label reader and utilize gluten free products, such as brown rice pasta, to create tasty meals that are gluten free that he no longer can order at any restaurant.
My favorite family cooking traditions
Making cookies. It's my mom's specialty and growing up in the country there wasn't much else to do, so I learned to make good cookies.
My cooking triumphs
I've recently discovered cooking with wine and I have a great recipe for pork tenderloin with marsala wine and mushrooms. Every bite I absolutely savor and pat myself on the back because it's so good.
My cooking tragedies
I'm best when I follow a recipe. It's the times that I try to use my own combination of spices and ingredients that I often find I don't get the greatest results. But I'm still learning to cook, so hopefully venturing out to combine my own recipes will come with time.

Creamy Cajun Shrimp Pasta
I LOVE this recipe. It's become a staple in our home. Just a few changes to make it gluten free for my celiac boyfriend... I use brown rice fettuchini pasta, and 1/8 c. corn starch in place of the flour. So simple and delicous!

Flourless Chocolate Cake I
I made this for a family gathering and they loved it! My boyfriend cannot have gluten, so this was a great dessert to prepare that the whole family would enjoy. I served with fresh raspberries and whipped cream. Yummy!

Simple Spinach Lasagna
Outstanding! I like to add mushrooms to this. My boyfriend who likes meat in dishes, didn't know this was meatless. The leftovers are great too. I sometimes freeze leftovers in Gladware containers and it tastes great reheated in the microwave. Much tastier for a quick meal than a frozen prepackaged dinner.
