Cabbage Roll Casserole

This is a good recipe. I didn't want to heat up the house by turning the oven on, so I cooked it in a Dutch oven on top of the stove. Worked just fine. My husband and I both like it. Much easier than making cabbage rolls! I'll make this again.

Mulligatawny Soup I

I just made this and ate a bowl. Very, very good. I doubled the recipe and glad of it. I forgot to add the cream at the end and didn't even miss it. I'll add it later, though. Differences: I roasted the chicken breast first with olive oil, salt & pepper, then cut it in bite sized pieces after it cooled... and I added three shakes of cayenne. Delicious.

Slow Cooker Spicy Black-Eyed Peas

I used Better Than Bouillon instead of the cube, 1 large onion, 5 cloves of garlic, 1 carrot, 2 stalks of celery, 1 red pepper, 2 jalapenos. I fried the bacon, then sauteed the veggies in the bacon grease just until softened, along with the cumin and 1/2 tsp cayenne. I added the ham, 1 Tbls of honey, and also added chopped kale for the last hour. Delicious! Best beans I've ever tasted. Thanks for the recipe.. and the tips!

Grandmother's Buttermilk Cornbread

This will be my cornbread recipe from now on! I mixed the batter in the skillet after melting the butter, and it was so easy! Mine was not cakelike, though, as it turned out dense - just the way I like it. Thanks!

Chicken Chipulos

This recipe is easy and very tasty. I followed the advice of another reviewer and added a 7 oz can of salsa verde instead of the can of mushroom soup. I used corn tortillas instead of flour, and used scissors to cut them into bite-sized pieces. Lots of flavor. Very good.

Mushroom Stuffed Zucchini

Vegetable Chowder

This is much better than it looks. I did as another reviewer and omitted the flour and used my immersion blender to blend about half the soup, but leaving it chunky. I added the cup of milk, using 1/2 cream and 1/2 1% fat milk, and only 1 cup of Cheddar cheese. I also used dry parsley instead of fresh. What a great way to get your veggies!

Microwave Caramel Popcorn

I made this last night and it turned out perfectly. Some of the reviewers said theirs didn't turn out, and I think it depends on the microwave watts. Mine is also a convection oven, and is only 900 watts. I followed the instructions to a "tee" and it was perfect. It even hardened on after being turned out on waxed paper. Great recipe! Thanks!

Dutch Babies II

I read all reviews and this is what I did. 3 eggs, 2/3 C butter, milk, and flour, tsp vanilla, pinch salt. I put a 12" Calphalon pan in oven while preheating to 425, with butter in the pan. When preheated the butter was browning. I added a sliced apple and sprinkled cinnamon on it, then dumped in the batter on top, and baked it for a scant 20 minutes. It slid right out of the pan. I served it with sugar-free maple syrup and it was delicious! What a treat, and sugar free!

Lemon Icebox Pie III

Love this pie! It's so easy! The proportions are good, but I added one more lemon's zest for a tangier flavor. Just taste before filling crust to get the lemon to your liking. I topped it with blueberries. Thanks for a great, easy recipe, Heather!

Bowties with Chicken and Asparagus

I've made this twice now, and I love the recipe. However, for 16 oz of pasta, I use at least 2 bunches of asparagus, 3 to 4 chicken breasts (cut into 1" pieces) a cup of chicken broth, 6 to 8 cloves of garlic, and 1.5 cups of Parmesan. I also sprinkle it with crushed red pepper flakes, then top with lemon zest when serving. Delicious!

Kielbasa with Brussels Sprouts in Mustard Cream Sauce

Amazing Pork Tenderloin in the Slow Cooker

I seared the meat in a skillet first, after seasoning with salt & pepper. Then I followed the recipe exactly. The meat was very tender and delicious. 4 hours on low was perfect, but I had two small tenderloins instead of one large one. Very good recipe.

Cranberry Gelatin Salad I

This is a quick and easy way to serve cranberries. The gelatin mellows out the sharpness of the cranberries but retains the flavor, the pineapple adds another texture, and the nuts give it a crunch. Very good.

Portuguese Chicken I

I made this tonight and it was delicious! I make a 40-garlic chicken that tastes much like this, but it takes a lot longer to prepare. I used chicken tenders and it took less than 30 minutes. This recipe is a winner!

Wilted Spinach Salad

Whenever I think of a wilted spinach salad - this is the one I want. Very good just the way it is, but you can change the ingredients to suit your own taste, as well. Excellent recipe.
