Yellow Chess Cake

These were surprisingly good. Very easy to make and had the right taste. I didn't care for the sauce, and next time I'm going to try using beef broth instead of chicken.

Chicken Breasts in Caper Cream Sauce

This recipe is a winner! Very good and very easy to make. At the end I just poured the cream right over the chicken and added the capers and let it simmer together until a sauce formed. Delicious!

Jean-Pierre's Cod Fish Soup

This soup looked intriguing, so I tried it tonight. It's fantastic! I followed the recipe exactly, but used red snapper instead of cod. I also didn't use a cup of red pepper flakes, since I think that's a mistake. I probably used 1/2 teaspoon and it was perfect for us. Great recipe though, worth every minute of preparation.

Aunt Carol's Spinach and Fish Bake

I tried this last night and it was too dry. I would try it again, though, using a cup of chicken broth in the spinach mix, then dot the fish with about 4 tablespoons of butter. It also took a lot longer to bake. I used very small fillets of red snapper.

Wilted Spinach Salad

Whenever I think of a wilted spinach salad - this is the one I want. Very good just the way it is, but you can change the ingredients to suit your own taste, as well. Excellent recipe.

Portuguese Chicken I

I made this tonight and it was delicious! I make a 40-garlic chicken that tastes much like this, but it takes a lot longer to prepare. I used chicken tenders and it took less than 30 minutes. This recipe is a winner!

Cranberry Gelatin Salad I

This is a quick and easy way to serve cranberries. The gelatin mellows out the sharpness of the cranberries but retains the flavor, the pineapple adds another texture, and the nuts give it a crunch. Very good.

Minnesota Pork Chops

This is a quick and easy recipe that is simply delicious. I cut a corner by using chicken broth instead of the water and chicken granules. I also used white rice instead of wild, but it's very good either way.

Cheesy Polenta

I substituted chicken broth for the water, as suggested, and added about a quarter cup of Parmesan cheese along with the cheddar. It was very good, but next time I'll use less salt. Good basic recipe. Very rich and tasty.

Amazing Pork Tenderloin in the Slow Cooker

I seared the meat in a skillet first, after seasoning with salt & pepper. Then I followed the recipe exactly. The meat was very tender and delicious. 4 hours on low was perfect, but I had two small tenderloins instead of one large one. Very good recipe.

Cabbage Roll Casserole

This is a good recipe. I didn't want to heat up the house by turning the oven on, so I cooked it in a Dutch oven on top of the stove. Worked just fine. My husband and I both like it. Much easier than making cabbage rolls! I'll make this again.

Pork Chops with Apple Curry Sauce

This is delicious! I can't chop and carmelize onions and apples in 10 minutes, but the extra time is worth it. Next time I will use less juice and sauce, as others have. I also used 2 Tbls curry powder and it was too much.

Slow Cooker Spicy Black-Eyed Peas

I used Better Than Bouillon instead of the cube, 1 large onion, 5 cloves of garlic, 1 carrot, 2 stalks of celery, 1 red pepper, 2 jalapenos. I fried the bacon, then sauteed the veggies in the bacon grease just until softened, along with the cumin and 1/2 tsp cayenne. I added the ham, 1 Tbls of honey, and also added chopped kale for the last hour. Delicious! Best beans I've ever tasted. Thanks for the recipe.. and the tips!

Grandmother's Buttermilk Cornbread

This will be my cornbread recipe from now on! I mixed the batter in the skillet after melting the butter, and it was so easy! Mine was not cakelike, though, as it turned out dense - just the way I like it. Thanks!

Chicken Chipulos

This recipe is easy and very tasty. I followed the advice of another reviewer and added a 7 oz can of salsa verde instead of the can of mushroom soup. I used corn tortillas instead of flour, and used scissors to cut them into bite-sized pieces. Lots of flavor. Very good.
