Cannoli Dip

Easy to make and a serious crowd pleaser. I use fat free cheeses and its delicious. No one knows the difference.

Grandmother's Pound Cake II

OMG! Light, fluffy and delicious. I added a tablespoon of vanilla and made a loaf and 6 mini bundts. Definitely a keeper and going to try different flavors i.e. lemon, orange, etc.

Butternut Squash Soup

This is the 3rd time I'm making this and I have to double the batch because my sons friends love this. I also cut the squash in half and roast it for about a half an hour and I substitute butter as I dislike margarine. The squash is so much easier to cut and definitely more flavorful. I added a little more cayenne as well. De-Lish!!!

Best Darn Minestrone Soup Around

Delicious! I cut it in half because I just didn't need that much. I subbed frozen vegetables instead of canned but you need a little more salt than called for. I also used stock instead of broth.

Curried Chicken with Mango Rice

Very good. I also tweaked this after reading some other reviews. I chunked the chicken and marinated it with curry, fresh ginger and S&P for an hour. In a skillet I cooked the chicken with some olive oil, removed it and then added 2 cloves of chopped garlic and the rest of the ingredients. I substituted jasmine rice which needs more liquid, so I increased the broth to one 14 ounce can and added equal amounts of water and wine, as needed, re-seasoning with curry, S&P, to taste to the additional liquid. I added the chicken and mango at the last minute to the pan, just stirring to heat the chicken back up. I will definitely make this again.

Cream Cheese Mints

Very tasty! I made a half batch just to test this recipe and they came very good. I didn't bother to measure the confectioners sugar and just kept adding more to get the dryer consistancy that allowed me to work with it. I took about a 2" piece of it and dusted wax paper with the sugar and rolled it like a snake and cut them into 1/2 pieces. They dried quickly and I let my neighbor taste them and she really liked them so now I'm going to make a full batch to take with me to her party tomorrow.

Mulligatawny Soup I

EXCELLENT!!!! I doubled the recipe immediately because I knew that I was going to love it. I use chicken "stock" instead of chicken broth for that "long cooked flavor", but I'm sure the broth fares just as well, by all the wonderful comments this recipe has received. There wasn't a drop left at dinner this evening and I will be making this a lot over the coming winter months. Yummy!

Waldorf Salad II

Very tasty indeed. Thanks for the recipe. I used some tips from the other reviewers i.e. coating the apples in lemon juice and using the Sunmaid raisins. I also added a wee bit more mayo since I added diced chicken. I took this to work and shared it with a friend who also loved this salad. This is a keeper for sure.

No Bake Cookies I

I was craving something sweet and easy when I came across this recipe. I wasn't sure if I wanted to make a whole batch so I modified it and only made a dozen. What a big mistake that was! Now I have to go back and make more. I ate 4 of them while they were still warm, they were that good. I used creamy peanut butter instead and you MUST start timing right after the boiling point in order for them to roll properly. Thanks for that tip. My batch came out perfectly and were fast and easy to make. This is a keeper for sure.

Chewy Peanut Butter Cookies

I just finished making these for my family and although I added a 1/2 cup more flour, extra peanut butter and a little vanilla. They were easy to make but not very flavorful in my opinion.

Famous Coconut-Almond Balls

Saltine Toffee Cookies

I tasted these at a party recently and they were delicious. The person who took them to the party would not give me the recipe but did however tell me that they were made with saltine crackers. HA HA to her!!! I just knew that I would find the recipe on here. I made them as soon as I came home. EXCELLENT!!!!!

Jiffy Cinnamon Rolls

These were easy to make and tasty. I made a little extra filling since I knew that I was going to omit the currants. I used a greased 9" cake pan instead of the muffin pan and they came light and fluffy. I added a few drops of vanilla to the icing.

Banana Bread I

Very easy to make and it came nice and moist. I added a little vanilla and used 1/2 cup each of brown and white sugar as some suggested. I baked it in an 8inch cake pan for 30 minutes since I couldn't find my loaf pan. This is a keeper!!!

Chocolate and Almond Biscotti

Excellent! Being Italian, I know my biscotti. I lost my grandmothers recipe and was looking for something similar to hers. This was very flavorful. I did a few variations on this recipe but the original does stand alone. Since I like a longer cookie, I made 2 large, wide loaves.

Maryland Crab Cakes I

Excellent! I made these as part of my Italian 7 fish Christmas eve dinner and got raves. Handle with care as they are very delicate. I will NEVER order crab cakes again in a restaurant.
