Black Bean Hummus

Great recipe! A nice change from the traditional garbanzo bean hummus (which I also love). I added a few extra garlic cloves in, as I do with most recipes. I will definitely be making this again soon.

Sicilian Garlic Sauce

Excellent as is. The only thing I did differently is use half the salt the recipe called for. I served it over hot spaghetti and it was perfect!

Fettuccine with Sweet Pepper-Cayenne Sauce

I've made this recipe a few times with mixed results, depending on what cheese I've used. I try to cook with low-fat or nonfat whenever possible, but I've found that using a low fat Parmesan cheese usually makes the sauce come out sort of chunky rather than creamy. I also use vegetable broth in place of the chicken broth since my girlfriend and I are vegetarians.

Double Tomato Bruschetta

This was my first bruschetta recipe that I attempted.. and I was very impressed! (As was my girlfriend.. she asks me to make it quite often.) It included one of my favorite food combinations; tomato and basil and the balsamic vinegar added a really nice dimension as well. I second what some of the other reviewers have suggested: brushing some olive oil or some butter on the bread and browning it lightly under the broiler before adding the topping to it. Getting a fresh, high quality baguette is ESSENTIAL to making this recipe successful!

Spiced Sweet Roasted Red Pepper Hummus

This was the best hummus recipe I've ever made. A perfect balance of sweet and spicy. I usually use a little bit less (only 2 tbsp.) of the lemon juice unless I'm in the mood for a more tangy hummus. If you like very smooth hummus I HIGHLY recommend removing the skin from the chickpeas beforehand. It's very tedious (usually takes me an extra 20-30 minutes of prep time) but I promise it is well worth the extra labor. Also worth noting, I've noticed that I sometimes end up having to add a bit of oil and/or water while processing to achieve the desired consistency. Enjoy!
