Wonderful recipe, goes great with brie cheese (appetizer)! Also, I used ground cardamom instead of the extract, gives a nice little appearance/color to the bread instead of plain white ... one more change I did was to use craisins instead of raisins, adds a very nice red color to the bread, festive!

Downeast Maine Pumpkin Bread

I use fresh pumpkin for this recipe (about 2 cups is equivalent to 15 ounces). EXCELLENT outcome, everyone loves it!

Spinach-Cheese Swirls

FRUSTRATION. First of all, i made the spinach/cheese filling and noticed that it didn't look like very much ... next i laid out the puff pastry, this is where the frustration was, it was impossible to unfold the stuff so i just used a rolling pin and flattened it out. I had to make another batch of filling (minus the spinach this time) just to have enough to cover the puff pastry. I also added some other herbs and spices to give it more flavor. Overall, not a good recipe.

Chocolate Chip Banana Muffins

This recipe is AWSOME! I modified it slightly and used sour cream instead of plain yogurt, it lightens up the muffins a little and keeps them more moist. I have won ribbons at my state fair with this recipe!
