Beef Tips and Noodles

My variation of this recipe includes skipping the onion soup mix and using chopped onion and lots of garlic. I also used fresh chopped mushrooms. I added a 1/4 cup of cooking wine as well for a nice depth to the flavor. I doubled the recipe and we ate half for dinner and the other half goes into the freezer for after the baby gets here. This freezes nicely, just thaw and warm in the microwave for fast dinner!

Blackened Salmon Fillets

these tasted ok, but the smoke from cooking it filled the house so much that we set off all the smoke alarms and had to go outside along with all of our pets (including a caged bird). I wont make it again, not worth the hassle.

Carrots Au Gratin

This is soooooo yummy! I cut the recipe in half since it is just me, my husband and my toddler, big mistake! We gobbled it all up and wanted more! Next time I will definately make the full 8 servings. Also, I will add a little crushed garlic. Any time you see a 2.5 year old scarfing down cooked carrots, you know it's a good recipe!

Classic Hollandaise Sauce

This recipe was extremely salty and peppery. I thought it looked like too much of each, but the previous reviewers made no mention of it being salty or peppery. I would cut both down to 1/4 tsp.

Whole Wheat Honey Bread

This is a wonderful recipe! all my past attempts at whole wheat bread had turned out disasterous, this loaf was perfect. It's slightly sweet, light and well textured. I substitued butter for the shortning and 1/2 cup wheat gluten for 1/2 cup of the flour. I also added a handful of toasted walnuts to give it that expensive bread taste. I will add more nuts next time and maybe some sesamee seed or sunflower seeds as well. Makes a fantastic ham sandwich!

Cream of Cauliflower Soup II

This is a fantastic soup! I pureed all but one cup of the veggies and mixed those back in at the end. I topped mine off with a little shredded Monteray Jack cheese. My 2 year old liked it a lot too. This recipe is a keeper, quick to make and very satifying.

Chicken Enchiladas II

This was pretty good. My husband said it was bland, but I enjoyed it and my picky 2 year old gobbled it up. I used Monteray Jack cheese instead of Chedar and doubled up on the cheese. I think next time I make it, I will try it with mock crab meat instead of chicken.
