Absolutely The Best Shrimp Scampi

I've made this recipe a couple of times. Very easy and it is very delicious. I love the shrimp dredged in flour and spices first, it really contributes to the flavor.

Authentic Huevos Rancheros

We liked this recipe, it was something a bit different. I followed the advice of previous reviewers and after assembling, I put them under the broiler for a few minutes. My husband wasn't crazy about the fried egg and requested that I use scrambled egg next time. I made this for dinner but will make it again for weekend breakfasts.

Slow Cooker Stuffing

This was my first attempt ever at making stuffing and we really liked this (it was so easy)! I had seasonsed croutons on hand so I used those and left out all the spices except the parsley and pepper. Instead of the crockpot I baked this in the oven for 4 hours at 250º with the Roast Sticky Chicken-Rotisserie Style recipe from this website. Along with the gravy made from the drippings, everything went together really well.

Banana Chocolate Chip Cookies

These are really yummy! They are soft and have a cake-like texture - my favorite type of cookie! The flavor is really good too. I used about 1-1/4 cup of mini-chocolate chips and that worked very well.

Spanish Rice Bake

This recipe had a surprising flavor - it tasted a lot better than it looked. I cooked the dish using the times listed in the recipe and the rice was a bit underdone. I would recommend tasting the rice before serving to make sure it's done. Not sure if I would make this again. It was good but not great.

Chicken Liver Pate

I made this pate over the holidays and served it at a couple different gatherings. Overall, it was liked by all those who tried it. The sherry is a nice touch. I don't know if I would make this recipe again, I know I've had better pate. I will probably keep searching for a pate recipe.

Cowboy Skillet Casserole

My husband LOVED this dish! I didn't love it as much as he did but it was good. It's something a little different than the usual casseroles. I did not have fajita seasoning on hand and the recipe submitter mentioned in a previous review that the original recipe called for Southwest Seasoning. I went online and found an Emeril recipe for Southwest Seasoning, whipped that together and used it to season the dish. I used almost 1-1/2 tablespoons and I thought it was spicy. I'll be making this one again since my husband raved about it.

Mom's Pumpkin Pie

This pie was just okay - nothing to write home about. I used a deep dish pie crust and had enough filling leftover to make part of another pie, so I mixed up another 1/4 of a batch of filling to make a second pie - didn't want to waste it. Also, I too, had to bake this pie almost 1 hour longer than the recipe noted. Overall, I found this recipe to be somewhat inconvenient and not worth the trouble.

Darra's Famous Tuna Waldorf Salad Sandwich Filling

An excellent sandwich recipe! Gives a great twist to plain ol' tuna salad - very crunchy. I used a honeycrisp apple instead of grannysmith and we did not use the croissants, we ate it in pita pockets instead.

Cubanos Frijoles

My husband raved on and on about this dish and said it was the best food he's ever had! I did not have cilantro on hand so I left it out but I will add it next time. It looks like I'm going to be making this one a lot since my husband is still talking about it days later.

Spicy Orange Beef

This recipes was good however, I thought the overall flavor was quite strong (not spicy). The hubby liked it, but he likes things with very strong spices and flavors. I left out the orange peel and made 1-1/2 times the sauce. I would not recommend making extra sauce since you don't need much sauce to get the effect. When I went to save the leftovers, I threw out the excess sauce.

Honey Crunch Pecan Pie

I made this pecan pie for our family's Thanksgiving celebration and it was AWESOME! It is loaded with pecans (the more the better). The pecans added to the top were carmelized since they are mixed with sugar and butter before adding. I liked this pie better than the regular pecan pie, it had a lighter flavor. This recipe sure deserves the awards won at the Pie Championship. BTW, I used a prepared, frozen pie crust.

Beef and Bean Chimichangas

Very good recipe. My husband loved it and said they were "outstanding." I substituted a couple of ingredients however. Instead of 2 cups of taco sauce I used 1 cup taco sauce plus 1 cup of enchilada sauce. Instead of the corn I added one can of Rotel tomatoes with green chilis (drained) and a small can of sliced black olives. In the end, I thought they were fairly spicy and very good.

Barbecued Beef

All of the reviews are right, this is a great recipe! The flavor was wonderful - I wouldn't change a thing. I did thicken the sauce with a bit of cornstach and water during the last hour of cooking as several people suggested, but I'm not sure if that would have been necessary. Next time I will make it without thickening.

Bum's Lunch

This recipe was just okay. I thought it was quite bland and in need of more spices. I added sliced carrots and seasoned everything with Lawry's seasoned salt in addition to the salt pepper. On the flip side - it was super easy to make and hardly any clean-up since everything was in the packets. It's a great idea for a meal, but it needs something...

Baked Soy Lemon Chops

This was very good and very easy, I would definitely make it again. I was surprised at how tender and moist the chops were. When I put it in the oven I started thinking they might turn out dry. I marinated the chops in a ziploc bag for over 7 hours. The lemon taste was very subtle to me, my husband didn't even realize there was lemon in the dish. So, if you want a real lemon flavor I would add more than the recipe calls for.

Penne Russo a la Vodka

I know this recipe has had great reviews so far but we did not like this at all. I have never cooked with prosciutto before and maybe it was that flavor that we did not care for. I increased the prosciutto because my husband likes more meat in dishes like this.... I would not recommend doing that.

Exquisite Pizza Sauce

Very good pizza sauce and very simple to make. It has a bit of a 'zing' to it. The hubby really liked it. I added all of the honey called for but I would definitely reduce the amount next time, as recommended by other reviewers.

Honey-Lime Fruit Toss

The honey and lime add a very nice touch to what would otherwise be a basic fruit salad. If I made it again I would probably increase the lime and honey a bit. I made it to take to a cookout and it went over quite well. Definitely a great summer recipe!
