About this Cook
I am married and a stay-at-home mom of one son (a toddler). I wouldn't consider myself an "expert" as noted above but I do have 20 years of cooking experience. I grew up with a mom and grandma who both loved to cook and bake and were very good at it (they both worked in food service for over 20 years). They cooked mostly from scratch and I, too make every effort to cook from scratch.

My mom and I get together during the Christmas holidays and make cookie and candy specialties.

I'm a pretty basic cook so I don't have any major feats to mention.

Nothing stands out in my memory, except for the occasional incidents of accidentally leaving something out of a recipe.

Absolutely The Best Shrimp Scampi
I've made this recipe a couple of times. Very easy and it is very delicious. I love the shrimp dredged in flour and spices first, it really contributes to the flavor.

Authentic Huevos Rancheros
We liked this recipe, it was something a bit different. I followed the advice of previous reviewers and after assembling, I put them under the broiler for a few minutes. My husband wasn't crazy about the fried egg and requested that I use scrambled egg next time. I made this for dinner but will make it again for weekend breakfasts.

Slow Cooker Stuffing
This was my first attempt ever at making stuffing and we really liked this (it was so easy)! I had seasonsed croutons on hand so I used those and left out all the spices except the parsley and pepper. Instead of the crockpot I baked this in the oven for 4 hours at 250ยบ with the Roast Sticky Chicken-Rotisserie Style recipe from this website. Along with the gravy made from the drippings, everything went together really well.
