Peppermint Meringues

I'm making this recipe right now. I squeeze-dried maraschino cherries then minced them. I gently folded in almond extract and the cherries after stiff peaks were reached. I used a gallon zip-lock bag with the tip snipped off. No parchment paper so I'm using the foil as in the recipe. They're so cute! And, so far, look perfect. Can't wait to get them out of the oven to try.

Chocolate Cupcakes

I baked these today to take to work for co-workers who are leaving. I used 1/2 cup of butter to cream with the sugar. As suggested elsewhere I only filled the cups halfway. Oherwise, I used the recipe as is. Moist and wonderful. I'll use this as my go-to cupcake recipe from now on.

Egg-free Brownies

This recipe is wonderful as is. I made it in a glass 9x13 dish and it came out perfect. We especially liked the nice, thin, crispy top it had when finished.
