Satiny Chocolate Glaze

This recipe is amazing! I was sceptical because of the chocolate chips but it works just perfect and is a nice semi-hard glaze. It was smooth and rich and stayed chewy-hard at room temperature. I will use this all the time now! I didn't change a thing (but used a pot of boiling water and a bowl).

Healthier Brown Sugar Meatloaf

Delicious! I don't normally like meatloaf so this was a nice surprise. I did add garlic powder, paprika and some italian seasoning to the mix and I only had seasoned breadcrumbs on hand. The next day it was firm and not mushy. I will make this again!

Spaghetti Squash Tacos

This was DELICIOUS! I made a couple modifications. Once I added the squash to the onions and added the taco seasoning (I used Old El Paso spicy) I let it cook down quite a bit because all the water came out of the squash and it would have been mushy. I didn't put in jalapeño since the spices were already hot but I added fresh garlic with my onions. I don't shy away from heat but without the fat of ground beef the taco seasoning was actually hot enough. I also just did a soft tortilla and stuffed it with cheese, lettuce, tomato, avocado and sour cream and I topped it off with about a quarter cup of warm chickpeas to make it a little more filling. So good! This recipe alone I would say made three burrito style tacos once the squash rendered down... even with all the additional fillings. So if you have a couple more people to feed I'd say make two squashes.

Pizza Casserole

I also saw that this was going to be bland so I added spices. However when I opened this up and baked it, it was extremely dry. It needs way more sauce.

Lactation Cookies

Well these cookies would be good but they taste like bitter beer. It must be my yeast even though the package said it was de-bittered. They are awful I can't even eat them. I'll have to add a ton more sugar or eliminate the yeast all together if I make these again - too bad because everything else about the cookie was good. They were soft and chewy and full of good ingredients.

Gluten-Free Granola Bars

Well, I didn't have any corn syrup so I had to improvise and it turned out amazing! I will make this again. Instead of corn syrup I used 1/2 cup of honey and 1/2 cup of aunt jemima syrup (haha). I used cappuccino chips because I just wanted a different flavour. Otherwise I did everything the same and YUM!! I also pressed it into a pan lined with wax paper to make them come out nicer. I also found that in order to get 36 bars you really have to cut these small (less than an inch to get 12 across the pan - not what the picture would suggest). Not really realistic for anyone to eat them that small but it doesn't really matter. But if you are making this for a group you might over estimate what you have that's all. Because I had used honey and syrup they came out a little soft but I think they are better that way anyway they don't even taste like a granola bar.

Rosemary Braised Lamb Shanks

This recipe turned out amazing. I made a few changes since I didn't have canned tomatoes on hand. I used 3 medium whole tomatoes and a can of campbells tomato soup. I also didn't have beef broth so doubled up on the chicken stock. I used Merlot as my red wine. Other than that I didn't change a thing. I really didn't want to wait the 2 hours of cooking (was so hungry!) but you really have to to get that flavour infused in. The husband devoured it! I served with rice. Will definitely make this again.

Dark Chocolate Cake I

By far the best chocolate cake recipe I have ever used. I use this on its own, or as a base layer for another cake I make and I always get compliments on it. There is not one thing I have changed in the recipe either. It doesn't even need icing it's so good just on it's own!

Acorn Squash Soup

wow wow wow wow wow!!! I used to hate squash. really. I'd stay far away from it. My brother made squash soup once and I had to struggle to keep it down! My mom gave me an acorn squash and I just pictured me throwing it out the car door on the way home. I found this recipe and gave it a shot because I can't stand to see food go to waste. I have never been so happy to be proven wrong - clearly my brother had no idea what he was doing. This is a fantastic recipe. I made no alterations at all, every ingredient compliments each other so well. Actually I made one change, I didn't puree the soup mainly from laziness. I like chunky soup though. I will be making this again and it's so healthy and good calorie-wise for anyone wondering. It made 45 oz, 7.5 oz a serving. WOW!!! THANKS!!
