What a great Sunday it is today! I am going to offer a recipe today that may seem a little weird to some, or it will be intriguing. I am hoping for the latter case in this one.  I stumbled across this from a friend that said he worked somewhere that used a version of this recipe, so I started playing until I hit upon this and it appears to be a hit with the family.  I use it mainly for chicken, but I have been told it works on various types of Seafood as well.

 

Captain Crunch Fried Chicken

 

1 Whole Chicken cut into pieces

2 Cups Buttermilk

2 Eggs

1 Tsp. Black Pepper

2 Cups Self-Rising Flour

2 Cups Ground Captain Crunch Regular Style---2 Cups after you process in food processor

ΒΌ Freshly grated Parmesan Cheese

7 Drops of Hot Sauce

 

Wash and Pat Dry Chicken, Place Flour and Crunch in Plastic Gallon Size Zip Lock Bag, Add Pepper and Grated Cheese. In bowl combine eggs and Buttermilk and mix well.  In Bowl mix chicken with hot sauce to barely coat the chicken, will be very lightly wet.  Dredge in flour, then Buttermilk and eggs, then back in the flour mixture.  Fry in hot canola or peanut oil at 365 degrees.

Reduce heat to 350 if chicken begins to darken to fast before being done.

The recipe makes enough breading for more than 1 chicken, so you can adjust the recipe down if needed.

 

I serve mine with Horseradish Mashed Potatoes and Gravy and steamed Green Beans.  A really great cheat day recipe.

I have head of this being done, a years ago. Never had a interest since I don't care for sugar all that much in my foods. It would be interesting to try just for the sake of it however.

Once cooked a Standing Rib Roast that was so tough you needed a Skill Saw to slice it and it was already on the table.
