Black Bean and Salsa Soup

Awesome and simple but flavorful soup. I followed the tips of others and made it all in one pan (with immersion blender instead of food processor) and also added the extra cumin. I would have added cilantro if I had it but didn't. Also, I don't think it made any difference but I used 1/2 cup chicken broth and 1 cup of vegetable broth because I was just trying to use up some leftovers.

Chinese Chicken Casserole Surprise

It was a little liquidy and taste was good. It's just average in my mind. That should not be seen as a negative thing. It's just not something that I would put into the regular rotation.

Chicken Taquitos

The main thing that I wanted to comment on for those who may be looking, I had to tweak this recipe by using green enchilada sauce in place of the green salsa, and I opted to bake the taquitos instead of frying them. We had good success by baking them for 9-10 minutes on a cooking sheet at 500 degrees. Before putting them in the oven, we would baste the corn tortillas with olive oil. Worked great!

Chicken Chipulos

It's a good casserole type dish. I would suggest that you follow some of the other suggestions to spice up the dish if you pallet leans more towards a spicy preference.

Beef and Bean Chimichangas

It was good and I would make it again. The only reason it does not get 5 stars is because I don't crave to make it. I made some changes to the recipe. I didn't have taco sauce, so I used enchilada sauce. I also added some black beans and cut back a little on the beef.

Whit's Chicken Enchiladas

Chicken Enchiladas I

I had to adjust the chicken mixture sauce to meet my preferred consistency. I thought it was a little saucy. Also, I would put cheese on top of the enchiladas when cooking. It's a visual appearence thing more than a taste thing. Cut it out of the cheese mixture if your cheese-conscious.

Cuban Midnight Sandwich

Maple Syrup Casserole Made in Heaven

The rating is more out of personal preference. If you like bread-pudding type recipes, you'll probably enjoy this. Oddly enough, with all of this syrup, one of the consumers of the dish commented that he would have liked some more syrup to put on top.

Layered Chicken Enchilada Casserole

I ended up using kidney beans soaked overnight (to saturation) and found them to be a little tough. The flavor was pretty good, but my preference would be to cut back some on the beans and substitute some of the protein with chicken. However, if you are looking for a vegetarian dish it would be fine as is. Lots of flavor.

Tomato Enchilada Bake

This dish surprised me. I thought it would be too heavy on tomatoes. I find it to taste pretty good and the sour cream and chicken seemed to mitigate all of the tomato-based ingredients. Worthy to make again, but not a 5-star in my book.

Beef Enchiladas I

A good basic enchilda recipe. I modified mine slightly due to what ingredients I had on hand. I used canned enchilada sause instead of the tomato/chili powder combo. I also used ground beef. I imagine it would be fine either way.

Family Casserole

I found this receipe to be better than I though as I assembled ingredients. I did modify it slightly in that I wanted some extra cheese on top of the casserole just for a finishing touch.
