Baked Honey Mustard Chicken
Wish I could give this a higher rating, but it really fell flat. The cooking time is too long and should be reduced to a total of not more than 35 minutes. 45 minutes dried it out. Maybe had it marinated in the sauce it would have turned out better, but wasn't impressed at all. No flavor. Tossing out leftovers. Sorry. :(

Three Bean Salad
Great recipe. I've made it using the variety of beans called for in the recipe, but have also made it with just green beans because they are our favorite. I prefer to use a red onion and since we have a diabetic in our home, I've made it with splenda too. Turned out just as good. I just replaced the sugar with the exact same amount of granulated splenda and it worked like a charm. This works as a side dish or salad for so many different main dishes. It's also just great to have on hand for a quick and healthy snack. Definitely a keeper.

Mom's Cucumbers
This is a pretty good recipe. The only thing is that it doesn't make enough of the liquid. So I ended up making three times the dressing/liquid so there was enough for the cucumbers and onions to marinate in it. I have made it with sugar and then tried it with granulated splenda (exchanged equal parts of sugar for the exact same amount of splenda) and it turned out nice both ways. I'll definitely make this again, but will always multiply the dressing/liquid two to three times as written.
